Random re: Bri's ziti

I know a bunch of us use and love this recipe (thanks, Bri!).  

 I used to make it with soy meat substitute for my vegetarians, but I decided to try to cut out some of our processed soy, so I tried making it with shredded/grated carrots in place of the meat.  It is SO good, I have quit making it with anything else.  

Anyway, I thought those of you who are watching calories might want to try it (if you can get your DHs on board with meatless meals).  I use two good sized carrots in place of the meat and shred them with my food processor.  I much prefer organic carrots because they have a slightly sweeter taste.

  • Mmmm! I love carrots. Sounds great! I sneak shredded zucchini in there sometimes and it's tasty, too.

  • I'll have to try that sometime. I'm looking for ways to get more vegetables into my diet, so thanks for the suggestion!

  • I always love seeing this recipe pop back up here and there.  :)  I think I may try adding in some extra veggies in with the meat next time.  Do you need more liquid or does it still come out saucy enough?
  • I don't need more liquid the way I do it (I still do the jar of spaghetti sauce plus the small can of tomato sauce), but you night need extra if you add veggies on top of the full amount of meat.
  • I didn't add any extra sauce either. I love this recipe Bri. It's so easy to change it up.

    Ooh! I can help on this one. Poke lots of holes in it with a fork and microwave it for 3-5 minutes depending on size. It should cut right open.

    Just don't be my own special kind of genius that somehow fails to realize that if the outside of the squash is super hot, so is the inside. Confused
