In our department at work we choose names and bring in a breakfast/brunch snack for each other's birthdays. Technically our "house" extendeds out of our department and includes a few other support staff. The name I drew this year is a woman I don't know very well and the rumor is that she has been doing Atkins for quite a while. She's never spoken to me or any of my direct coworkers about this, so I shouldn't technically know if not for the rumor mill.
So anyway, normally I would bring in muffins, breakfast bread, etc. I feel like I shouldn't bring that if she probably can't eat it, but again I don't really know that she can't....plus I don't have any other ideas! So, what would you do and any recommendations for an easy, portable low carb breakfast treat? ![]()

Country Breakfast Cassarole. Freaking yummy!! I use frozen sausage and dont cook it. It comes out fine. I make this a lot when DH has breakfast potluck at work.
Can people on Atkins eat oatmeal? I've done an overnight oatmeal in the crockpot that was really good.

Can you ask around to see if it's true. It would be so much easier to do muffins.
DH would recommend pickled eggs, since he eats them by the dozen. ICK is what I'd say to that!
