Aw: my secret Santa gift arrived!

Legalbritt got me such an awesome present! In 6-8 weeks I'm going to get my first issue (of 6) to Cook's Country! It's the mag that goes along with the PBS cooking show (which I think is super awesome too) show America's Test Kitchen. 

 

Thank you LB! This is such a sweet and thoughtful present. I really love it.

    And Legalbritt - what's the dip secret? 

    This is the recipe for the base. You can really add anything you want. I usually add spinach and artichoke hearts. This is the calorie info: Normal 223 calories, 22g fat; made-over it's 100 calories and 6 g fat. Pretty big difference huh! And really it's a goodly amount of work but it's just as satisfying. People rave about it when I make it and nobody ever knows it's low fat.

    1 c light cream cheese, at room temp

    1/2 c shredded low-fat cheddar cheese

    1/4 c low-fat sour cream

    2 tbls grated parm

    2 tbls lemon juice

    2 tbls chopped parsley

    1/2 tsp cayenne pepper

    Adjust oven rack to upper middle position and heat to 375. For topping process 1 slice hearty white bread and 2 tbls parm cheese until finely ground.

    For base, pulse cream cheese, chedder, sour ream, parm, lemon, parsley and cayenne with pre-prepared artichokes, crab or spinach until coarsely chopped,. Season with S&P. Scrap mixture into a prepared dish. Sprinkle eopping over mixture and sprey with cooking spray. Bake about 20 minutes until bubbly.

    For spinach/artichoke heat 2 tbls olive oil in large nonstick skillet over med heat until shimmering. Add 1 medium onion, chopped fine, and 1 red bell pepper, seeded and chopped fine, and cook until soft, about 6 minutes. Add 1 package frozen spinach and cook until defrosted and liquid cooks of. Stir in two minced garlic cloves, 2 tsp minced thyme, and one tbls lemon juice. Add one jar marinated artichoke hearts, chopped rough.
