butternut squash & costco

I have a renewed obsession with butternut squash.  My brother prepared it for thanksgiving dinner.  I decided to recreate the dish at home.  I am now hooked.

I cheat and buy the precut squash from costco, then just boil the squash for a little bit, drain it, add butter, brown sugar and cinnamon, talk about tasty. :)  Cliff likes it too, Kira wants nothing to do with it, I am okay with that, more for me.

  • I made the Pioneer Woman butternut squash puree for Thanksgiving the last 2 years and everyone always said they loved it, but since I also did sweet potatoes there was always a fair amount left. This year since we were away and had a smaller group I skipped the sweet potatoes and did "twice baked" butternut squash, basically you steam/roast the squash, scoop the insides out, mash it w/ butter, sour cream and either brown sugar or maple syrup, a little salt and then pour the mixture back into the empty squash halves and top w/ pecans and brown sugar. It was so good and made a really nice presentation!
