Royal icing question?

I usually make it and then use it right away but I was wondering if I could make it in advance and use it a few hrs later or even the next day if I kept it in the fridge?

Do any of you ladies know?

  • I would hesitate just because it will get crusty/ hardened.  That said, it can be done, just be prepared to add more water later and use a container you can stir all the way to the bottom.

  • ok, in my fantic baking/decorating the past few weeks, I've discovered that it actually lasts several days properly stored.  I left mine, in the decorating bags (w/ tips on), in a big cup with a little water in the bottom (always what I do in when I'm not using them in between drying) for THREE DAYS before cleaning them up (judge away, I was busy!).  Much to my dismay, the icing was still soft when I went to clean them up.  It was crusty towards the top of the bag, but the rest was totally fine.  If you were to rubber band the top of your bags shut and store them with the tips in jsut a little water (to keep the icing at the tip from drying), you could totaly store it for even a few days. 

    Who'da thunk it?!
