Potluck ideas needed

H's Holiday party is at a coworkers house this year and it's potluck. no one has signed up for anything yet but there's a line for main dish, appetizer, desert. I'm thinking of doing a main dish but can't think of anything good. Any advice?

  • Pork roast in a crock pot? We just made it the other night, I love it this time of year! There is a recipe for seasoning normally on the bag and we brown in a pan, toss in the crock pot with chicken broth, onions and garlic. Cook for 8-10hrs and serve over yellow rice..... soooo yummy.

  • Oh yeah, and I don't own a crock pot :/  But I should, so maybe I'll pick one up cheap this afternoon.  It might come in handy post c section anyway. 

    I found this recipe on What's Cooking and even though I didn't want to make a desert since I have no self control right now, it's sooo cute.

    I saw the Santa hat brownies on Pinterest, they are adorable. Amazon had an awesome deal on a large crock pot a few days ago. Like $17 for a large stainless.

  • For a main dish, what about a Honey Baked ham? Also, those Santa hat brownies are so cute! I might try and make some of those!
  • I make a really easy cheeseburger pasta.  It's just cooked penne pasta,  a can of nacho cheese soup mixed with a can of tomatos, cooked ground beef, and then after you mix all of that together you pour it in a casserole dish.  Then you pour shredded cheese on top and you bake it just for a few minutes until that top layer is melted.  

    You can also make it more of a mexican dish by crumbling up tostito chips on top and topping with some dallops of sour cream.

    It's not the healthiest dish ever but it's yummy and a great casserole for a chilly night. 

  • Two suggestions that I bring to them........

    Main dish: beef roast in a crockpot, seasoned w/kosher salt, garlic and onion powder and add 3-4 cans of cream of mushroom soup(one on the bottom and enough on top to cover the meat). It's that easy. The meat falls apart after being in the crockpot all day. At home I serve it w/mashed potatoes ;-) 

    Appetizer: http://www.bigredkitchen.com/2008/10/jalapeo-popper-dip.html I get so many compliments on that dip when I take it somewhere and I am always asked to bring it when going to parties. Also, you do not need to do it in a mixer if you buy the chopped/diced jalapenos. I serve it w/Ritz crackers.
