Whole chicken

Sorry, I am post whore this morning and it's all about food.  Embarrassed

I bought a whole chicken yesterday at the store and want to put it in the crockpot tomorrow.  I made a soup last time, but it doesn't sound good.

Any good chicken crockpot recipes out there?

  • I did chicken breasts yesterday, but I sure you can do a whole chicken.  I did 1 can of chipotle peppers in adobo sauce and 2 cans of dr. pepper. 

    It's this PW recipe but I used chicken and then shredded it and made nachos.

  • I just make up a rub (salt, pepper, garlic powder, onion powder, sage and thyme), and rub it all over under the skin; make sure you get it everywhere, front and back, then some more on the skin, and some in the cavity.  Set it in the crock pot (I would put large cubes of potato under the chicken so that it doesn't stew in all the fat runoff - soggy!, then throw those potatoes away when it's done cooking), cook all day, and enjoy when you get home!

  • My favchicken crock pot meal is just putting the chicken in, top with a pkg of dry taco seasoning and a cup or two of salsa cooked on high for about 5 hours. You can shred for tacos, nachos, or we like to eat it on top of rice.

  • I did this Saturday night.  I threw a whole chicken in the crockpot with some season but not alot because I actually deboned the chicken and am using all the chicken in the meals I preparing the next couple of days.
  • I usually just make mashed potatoes and gravy with it, and some stove top if I'm feeling really ambitious, and then use the rest to make chicken salad for lunches for the week. I've used it for Chicken Enchiladas before and that was really good.

    If you end up doing the chicken salad, we've made these and they are really good and a yummy alternative to just a sandwich.

    You deboned a whole uncooked chicken?!  Tell me you waited til after it was cooked...  :)
