My parents are visiting from Arizona this weekend and my husband's birthday is on Sunday, so I want to make a really nice, yummy, impressive meal on Saturday night. However, I am struggling to choose! I know I want to serve beef, but I don't know what combination I want to make the meal. Please choose one option from each column to help me make a delicious meal!
Column one: Meat
- Beef bourguignon
- Short ribs in a wine cream sauce
- Standing rib roast (most expensive, but classic!)
Column two: Starch
- Butternut squash risotto
- "Plain" risotto (made with Parmesan, white wine, etc.)
- Roasted garlic potatoes
- Homemade dinner rolls
Column three: Vegetable
- Wedge salad with homemade blue cheese dressing
- Autumn salad with greens, dried cranberry, pecans, feta or blue cheese
- Roasted asparagus/broccoli/broccolini, depending on what's on sale at the store this week.
I'm also open to other suggestions. My dad came to visit in October, and I made him pork ribs in a spicy tomato sauce, mashed potatoes, and lemon-garlic broccoli, so I dont' want it to be too similar to that (hence the lack of mashed potatoes in the starch column)

Assuming you have made all of these dishes before, I'd do the beef bourginon, roasted potatoes and the autumn salad.
- Beef bourguignon (I would serve it with/over mashed potatoes- even though you already did MP for your dad, I think BB over MP is really nice.)
- Homemade dinner rolls
- Wedge salad with homemade blue cheese dressing
- Roasted asparagus/broccoli/broccolini
but I am a pig and I don't think of a wedge salad as being that big of a deal to make, but I like it before a beef dish, because it's steak-house-y to me.
Do you have a breadmaker?
When I make dinner rolls I make them using the dough cycle on my breadmaker and it makes it so easy, just dump the ingredients in and then when the machine beeps you just pull the dough out and divide it and pop it in the oven.
