What's Baking?

Ok, so I'm starting a variation of our usual What's Cooking blog.  I would like to bake something other than pre-made Pilsbury Christmas cookies and am looking for inspiration.

  • oh my goodness!  thank you so much for posting this.  i was going to page tammy because i have the cutest no-chip chocolate chip christmas cookies. 

    its no-chip chocolate chip cookies shaped in an oval.  then you add 2 brown m&ms for eyes, a red m&m for the nose, and pretzels for antlers.  so fun!  someone on my fb feed made them and i was in awe of the cuteness.

  • I usually make 10 to 12 different varieties of cookies and this year I'm just not that into it.  I'm probably making chocolate chips and butter cookies and calling it a day.

    I swear the cookie tins call my name in the middle of night lol.  I'm trying to be good this year and not gain any weight so the less cookies I make the better!

  • Shan- im feeling the same type of way this year! saturday is supposed to be baking/wrapping all day so I need to get it together.

    We will definitely make a double batch of butter cookies, iced ricotta cookies, and chocolate chip. Those reindeer cookies sounds cute Ering, maybe i will make them with the kids one night, I seen them on pinterest

    I still have to decide on the rest of my cookies, I usually do about 8-10 different kinds

  • I am addicted to Martha Stewart's Giant Sugar Cookies. I'm not much of a baker, but every time I make these, they turn out awesome. The key is to put the baking sheet with the cookie dough on it in the fridge for about 5 minutes before popping them in the oven so that they don't spread out too thin.  Also, the bake time is closer to 15-18 minutes than 20-25 minutes.

    I use an ice cream scoop, and get 10 large cookies with this recipe.  However, it doubles easily so I usually make 20 cookies.

  • I am finally going to break in my pizzelle iron this year. I am also going to make chocolate chip, snowballs and thumbprint cookies.
  • Im keeping it basic this year with peanut butter kisses, some kind of chocolate chip or oatmeal chip, these delicious cranberry orange pinwheels http://www.bhg.com/recipe/cookies/cranberry-orange-pinwheels/ and some sugar cut outs to decorate with DD.

    I usually do jam thumbprints which could single-handedly keep the amish in the butter making business but Im just not feeling like making the effort this year. Im also thinking of making those pretzel chocolate button thingies where you melt a chocolate in the center of a bitesized pretzel and put an M&M on top....kwim...super easy and a delish alternative to the traditional cookie?

    image stolen from the google and not the ones my friend made (hers had m&m eyes).  but that is the basic idea of the super cute rudolph cookie.  and it doesn't seem like it would be all that labor intensive.

    Another alternative is to use a rolo instead of a hershey kiss and a reeses pieces instead of an M&M.  omg.

    I only make boring old Nestl? Tollhouse choc chips 

  • If I get a chance to bake and that's a huge IF, my list is/was:

    salted caramel thumbprint cookies (from babycenter)

    chocolate covered graham crackers and/or s'more bars

    snickerdoodles

    white chocolate bark with candy canes

    pumpkin chocolate chip cookies. mostly because I way overbought canned pumpkin this year.

  • I've got four kinds of cookies on my list this year:

    Lemon Slice and Bakes

    Vanilla Roll Out

    Chocolate with White Chocolate Chips  

    Peanut Butter Sandwich (with chocolate ganache in the center, instead of PB cream)

    If I have time, maybe I'll do a batch of plain sugar cookies too.
