We're having some friends over for a holiday dinner on Saturday night, and I'm still working on the menu. I was planning on doing tourtiere, a pork pie dish that my family used to always have on Christmas Eve. So a few areas I need help:
- there will be a couple of non-meat eaters, so I was thinking of doing a vegetarian pie as well. Any recommendations?
- what sides would you serve with it?
- there should be 9 people for dinner - should two pies in total (one meat and one veg) be enough?

I actually think two pies is enough, if you have enough sides.
The veggie pie can be alot like a chicken one without the chicken of course, so loaded with carrots, potatos, corn, peas, maybe even broccoli.
as for sides. A really nice salad loaded with stuff, so that the meat people can have their vegetables too and bread.
If you have courses like a pudding and a cheese plate you are good to go.
Anything with cheese and veggies should work well for the veggies. I had a fabulous goat's cheese / butternut squash pie at a restaurant recently, super yummy.
I never think I have enough food so we always make tons. I'd rather have leftovers! I know for my friends, a lot of them play football with DH and eat ridiculous amounts of food!
I'd make a big salad, something potato related and a veggie. What are you thining for a starter?

I wasn't planning a started course, per se, just probably cheese and crackers and veggies with dip as appetizers. Maybe some other finger food if inspiration strikes.

We usually did cheese/crackers and it took ages to realise everyone thought it was hilarious. In Scotland apparently, cheese and crackers are a later course. Oh well, I think cheese is delightful at any time of day!
I have a fabulous recipe for Spinach/Artichoke dip if you want it, really easy and everyone always loves it. I serve it with pita bread / tortilla chips and veggies.
I have now made myself hungry...

Yeah, in the UK the cheese course comes after the meal. Weird. The last thing I want at the end of the meal is cheese, but whatever.
I think two pies would be okay as long as about half of your guests are vegetarian, or won't mind eating the veggie pie. If it's only a few vegetarians, then I think you might want to do a small veggie pie and maybe pork pies?

Seems the number just increased to 10, so I'll probably do 2 meat and 1 veg just to be sure. Leftovers wouldn't be such a bad thing either.
I know in the UK and France, cheese is a later course, but I still prefer it to start with. And most of the people coming are American anyways, so they won't think it strange.

Basically I follow this -

But instead of having the mozzarella on top (it gets funny in the oven), I mix it through. I tend to put extra parmesan cheese in too. You can actually make this slightly healthy with low fat mayo (but not low fat soft cheese, that makes it way less good). It's seriously fabulous, Ive brought it to every potluck thing we've gone to and it's always well loved :-)
