s/o desserts.. buche de noel?
Has anyone made this? I remember my dad made one yeeeeaaars ago and it was great. Do you just make a regular sheet cake and roll it up with icing then decorate it, or does it need to be a special recipe? I might try it out to take to the in-laws for Christmas Eve.
Re: s/o desserts.. buche de noel?
It's usually made with a genoise. You need to place a damp thin tea towel on the cake and roll it up while it is still warm. Make sure to line the bottom of the jelly roll pan with parchment so you can lift it out while it's still warm.
Random comment----Le Central on Lincoln and 12th street near downtown, makes amazing buche noel this time of year.....whenever I'm visiting family in CO during December I try to make a trip because it is soooo good. (We had our rehearsal dinner there 2 years ago, and yes we were married in December!)
I've always wanted to try making it----good luck! Post the recipe if you find one that turns out!
Good to know! I get calls asking for them and the one place I used to send people stopped making them.
A half sheet pan is perfect. If you want a larger one, just make two logs and cut the 2nd one in half on a diagonal so that you can create 'branches' off the main log. The half sheet pans are under $5 at a restaurant supply place.
It is at restaurant supply stores. You might be close to the Cresco off 225?
