Need menu help

Tomorrow is Christmas with my mom and stepdad. I'm making crockpot pulled pork and baked mac & cheese. My mom is bringing some asparagus in puffed pastry dish. What other healthy vegetable option would you add?

  • Salad is good. You can do a variation on the salad.
    In my culture, we do what is called tomato salad. Its raw white onion sliced very very very thin then soaked in water to get the strong flavor out for about 30 mins. When ready add it to a bowl or dish with slices of tomato. Add vinegar a dash of oil, salt, and voila. Tomato salad. Its actually quite yummy.

    I like to do a "baked" cauliflower as well. I microwave the cauliflower to soften it, wet it with some warm water then put it on a small tray for the toaster. (use pam spray). I sprinkle a dask of breadcrumbs over it and a pinch of parmesean cheese for a little crunch. I "toast" it for 5-10 minutes.

    I had a salad at BBs the other day that has spring mix, dried figs, and croutons which are made of soft bread stuffed with goat cheese.  It's normally topped with ham, but I had them replace that with rotisserie turkey.  I may or may not have been thinking about this salad since last Saturday.

    Hispanic. I didnt realize a tomato & onion salad was common. I've never seen it ANYWHERE before so I assumed. . . whoops.

    DH's family does a variation of tomato salad as well. They're European. I make it with soft mozzarella sometimes. So good.

  • My family is Italian mostly and we do it too, a slightly different variation though.
