Your Favorite Cookie Recipes

So DH is going to Buffalo this weekend with the boys to watch the Bills take on the Dolphins (don't ask - I have no idea why someone would want to go to Buffalo in December).  Anyway - I have the house ALL to myself this weekend (can't wait) and I am really in the mood to bake some cookies.  The problem is, I'm typically the 'cooker' not the 'baker' and I have no favorite cookie recipes. 

Can you share yours with me?  Please.

....something relatively not too complicated...and sidenote: I'm so excited to use my kitchenaid mixer for the first time....

  • Here are 2 recipes I always use around the holidays. The first is basic sugar cookies that you can roll out and cut into shapes and decorate. The second we call Caterpillar Cookies in my family but they are also called Mexican wedding cakes or Russian tea cakes.

    (sorry for any weird formatting - I copied these out of emails I sent to people)

    Sugar Cookies

    1 1/2 cups powdered sugar
    1 cup margarine or butter (stick, softened)
    1 egg
    1 tsp. Vanilla
    1/2 tsp. Almond extract
    2 1/2 cups flour
    1tsp. Baking soda
    1tsp. Cream of tartar

    1) Mix powdered sugar, margarine/butter, egg, vanilla and almond extract
    2) Stir in flour, baking soda and cream of tartar
    3) Refridgerate at least 3 hours
    4) Heat oven to 375
    5) Cut into shapes
    6) Place on lightly greased cookie sheet
    7) Bake 7-8 minutes

     

    Caterpillar Cookies (they are also called Russian Tea Cakes or Mexican Wedding Cakes)

    Makes: 2 dozen

     

    1 cup margarine (not softened)

    1/2 cup powdered sugar

    2 cups flour

    2 tsp. vanilla

    1 tbsp. water

    1 cup pecans, chopped (I left these out because my husband doesn't like them, but I think they are actually better with the pecans - if you like them!)

    (extra powdered sugar for dusting)

     

    1) Preheat oven to 300 degrees.

    2) Mix ingredients; should be crumbly like pie crust

    3) Roll between fingers into tiny logs (2" long, 1/2-3/4" diameter)

    4) Place on ungreased cookie sheet

    5) Bake for 25 minutes

    6) Place on cooling racks to cool. Dust with powdered sugar.

    Chocolate Cake Reese's Peanut Butter Chunk Cookies

    Pumpkin Cookies with Cream Cheese Frosting

    Gooey Butter Cookies

    What I'm trying this year for the first time:

    Thin Mint Truffles

    Turtle Pretzels

    Candy Cane Snowballs

    Chocolate Toffee Shortbread Bars

    Thumbprints (I'll switch the almond extract out for vanilla and use strawberry jam)

    And I'm making my Mom's Lacey Oatmeal Cookies:

    Mix one cup quick oats, one cup sugar, 3 tbs flour, 1/4 tsp baking powder, 1/2 tsp salt. 
    Add 1/4 lb melted butter, one egg with 2 tsp vanilla.
    Place 1/2 tsp on shiny side of foil on baking sheet,
    Bake at 325 for 11 min until golden brown.
    Cool completely before removing from foil

    I was going to make sugar cookies, but I haaaaaate sugar cookies. So I'm just buying a tube of dough from the store, rolling it out, and letting DD make cut out cookies to decorate as she wishes.
