Anyone have a good Mexican rice recipe?
My mom has decided to do Mexican for Christmas this year and I have been tasked with making the rice for 20 people.

I made that for a texmex cookout and it was good! There were 12 of us with a little bit leftover, if I am remembering right!
For 20 people, you might just want to double the recipe, but make it in 2 casserole dishes rather than one giant one. And lastly, you don't have to grill the pepper and onion beforehand, it can go in raw.
i don't have a recipe for you, but i wanted to know if you'd be having tamales. and if so, how will you be making them or where will you be getting them from?
tamales are such a traditional mexican dish for christmas, i was thinking last night i wouldn't mind adding them to my christmas menu.
I'm not sure, but I'll ask my mom.
