Anyone have a good Mexican rice recipe?

My mom has decided to do Mexican for Christmas this year and I have been tasked with making the rice for 20 people.

    I made that for a texmex cookout and it was good! There were 12 of us with a little bit leftover, if I am remembering right!

    For 20 people, you might just want to double the recipe, but make it in 2 casserole dishes rather than one giant one. And lastly, you don't have to grill the pepper and onion beforehand, it can go in raw.

  • i don't have a recipe for you, but i wanted to know if you'd be having tamales. and if so, how will you be making them or where will you be getting them from?

    tamales are such a traditional mexican dish for christmas, i was thinking last night i wouldn't mind adding them to my christmas menu. 

  • Madisen - Every few months JJ and I have a tamale making session and I make about 100 and freeze them. I use the corn husk method, not banana leaves. Publix has the corn husks in the ethnic foods aisle. Usually I make 3-4 different types of filling, and a huge batch of masa for all of them.

  • impressive, ash! is the recipe you use in your blog? i don't know if i'll have the time to make them myself, but would like to see some recipes and/or some good places to buy them pre-made. we missed the cut-off for ordering from williams sonoma for christmas and they were really expensive there anyway....but would probably have been soooooooo good.

    This is my favorite recipe : http://www.veggiebyseason.com/2011/01/squash-black-bean-and-goat-cheese.html   not traditional really, but so good! I also make them with other beans, corn, and for my sister, spicy pork.
