Lunch?

What do you eat for lunch? Do you pack it or buy it every day? I am trying to come up with some healthy, cost saving ideas, but also have some variety. I get bored easily if I have the same thing day in and day out.

  • H and I usually pack our lunches (unless we forget them at home...oops!).  We usually try and do some type of salad or wrap with baby spinach and veggies and maybe include some turkey or chicken, sometimes just grilled chicken breast and steamed veggies, or leftovers from the night before like baked fish, etc.  I try to mix it up so we don't have the same thing twice a week so we don't get too bored with it.

  • I always pack my lunch...mostly because I don't want to eat school lunch haha. Although one of the HS's I work at has a restaurant, so I might try that out once or twice.

    I seriously eat the same thing for lunch every day. Yogurt, granola, string cheese and granola bar.

    Haha, I never pack my lunch. I usually eat school lunch or no lunch. Sometimes it's actually pretty good, and when it's terrible they usually have sandwiches as an alternative.

    DH packs a lunch every day. I know deep down that's what I should do. It would be cheaper and certainly healthier. I usually get a hankering for a sub or Mexican food.....or fast food :( 

    DH packs a sandwich, a bag of chips and a banana. I should probably start doing the same. I also never remember to bring leftovers, so they just sit in the fridge. I need to get better at food management! haha 

  • I pack my lunch every day, usually leftovers from the night before or a salad with what ever's laying around.  Sometimes when I'm running late, I just take the entire head of lettuce, the cucumber, the other veggies and dressing.  Today I've got a Greek quiche left over from last night's dinner (easiest thing in the world to make, btw) & an herb salad with spinach and cucumbers.  I try to portion things out the night before, when we're putting the leftovers away so that I can just grab them on the run in the morning.  I can't do a sandwich, chips & fruit, unless I'm on a sandwich kick that week because I get really bored too.

  • Lunch is when I squeeze in the majority of my veggies. I pack it pretty much every day but I also get bored with eating the same thing. I eat small meals (sometimes 6 or 7) so here's what is typically in my lunchbox, but it can vary widely:

    some sort of nuts and a piece of fruit

    cut up veggies with cubes of cheese or hummus or PB; cottage cheese or tomato

    a huge salad (varies all the time, I am the master at making different flavored salads)

    some sort of carb: naan, crackers, wrap, etc. sometimes a little container of pasta with tomato sauce or pesto; chickpeas, lentils, etc. 

    soup - always veggie based very low carb/sodium. You'd be surprised the variety you can get of veggie soups. Filling and healthy :)
