We're hosting our first Christmas dinner (YAY!) My parents are coming over around noon/1, but we'll eat about 5-ish. So far we have bought mini-quiche and plan to make a spinach dip. Do we need more for a light lunch/snack and if so, what might you suggest?

Mmmm, bacon wrapped water chestnuts!
I make a lot-
3 cans whole, peeled waterchestnuts, drained (found in the Asian food section, near the soy sauce)
1 cup soy sauce, 1 cup brown sugar, combined
2 packages bacon, each strip cut in half
Marinate waterchestnuts in soy sauce & brown sugar for several hours.
Wrap each in half a slice of bacon, secure with a toothpick. Bake in preheated oven 375 for 30ish minutes or until the bacon is fully cooked. YUMMMMMMMMMMMM!! And so easy!
Bacon-wrapped chicken poppers? They're easy and very tasty.

Endive Stuffed with Goat Cheese and Walnuts
i did caprese skewers for our family christmas on saturday, they were a hit.
basically...
grape tomatoes
mozzarella balls
fresh basil (i cut it into small strips/squares with scissors)
balsamic vinegar
toothpicks
i sliced the grape tomatoes in half (like right through their equator line, not long-ways), and on the toothpick put stuff in this order:
half tomato
little piece of basil
mozzarella
other half of tomato
put them all on a platter, drizzle with balsamic vinegar, salt, and pepper. you can drizzle with olive oil as well, but i bought the "marinated" mozzarella balls that are the size of a large marble (cut them in half) so they already had oil on them.
as long as you have enough cheese, you really can't screw up the proportions. they're tasty!
