UGh - Two Baking FAILS this Weekend

This weekend I planned to do major baking for my office.  I bake all the time and am usually really good at it.

Every year I make a macadamia brittle.  Used the same recipe, same pots.  The only difference was the stove (the house we bought has electric and not gas).  I used a candy thermometer.  It got dark and got to temperature pretty quickly.  I put it in the sheet pans and sliced it up.  When it was finally cool enough to taste I was so disappointed.  It was burnt.  Grrrrr.  Worse part - the black ick on the bottom (inside) of my all clad pot.  It totally does not want to come up.  DH may have to dremel it off!

ETA: I tried deglazing, soaking, bar keepers friend, baking soda paste, and chipping it away with a spactula.  The dremel worked well on the part we tried, but we need more of the tips.

Then I made chocolate chip cookies with macadamias.  Again, tried and true recipe.  Made the cookie dough, chilled it for 36 hours and went to bake it last night.  Went to take the first batch out of the oven and low and behold - the cookies melted and were awful looking.  Clearly something was wrong.

I trashed the cookies and the remaining dough.  Pulled out the recipe and went through it step by step to see what I did wrong.  Turns out I screwed up some math in my head - 3/4 cup plus 1/2 cup does not, in fact, equal 2 1/4 cup flour.

I am so bummed.  $40 bucks down the drain.

Maybe this is a sign I should do more savory cooking!

    Have you tried just filling it with water and bringing to a slow boil/simmer?  That's what we do to clean up pots we made toffee or candy in.

    Sorry about the flops -- it's frustrating when something doesn't turn out right that you feel you have a good handle on!

    b) I'm so sorry about that!  I'm making the gas to electric transition- it is hard!  I'm all about the thermometer in the ovens and in everything I cook.

    and yeah, i have only ever had gas stoves and transitioning to electric has not been fun.

  • I hate it when that happens and changing stoves always makes a huge difference.  My current stove runs 50 degrees too high and even though I keep a thermometer in there to check temps I still cannot bake a loaf of banana bread without burning the edges so that the center gets cooked and I too think I am a decent baker.

    I reeeeeally hope I get one for Christmas!  Supposedly, it's much better than a regular old candy thermometer. 

    And, LOL about using the Dremel.  That's SO something I would do.

    If the water doesn't work add some of the granualed dishwasher soap.  That's worked for me in the past, 

  • One other suggestion.... maybe oven cleaner?
  • I've heard that if you put a piece of fabric softener (bounce or the like) into the pan and fill it with water to soak, it will get rid of the burned stuff in the bottom of your pan. It's worth a try.
  • Boiling dishsoap, then simmering while stirring usually gets my pan clean.

    Sorry your baking and candy making failed. I struggle baking at my mom's because electric is so much different. I don't even attempt to make candy there. It takes so much longer for the coils to heat up and then they stay hot even if you turn the control down. I just end up burning what I'm making.
