It's up to me to make Christmas Dinner for H's family. I want a pasta dish so that I don't have to make a bunch of sides to go with a turkey or ham.
I found Make-Ahead Unstuffed Shells and I'm fine with making this. My question is do you think I should double the recipe or find a little bit different recipe? We'll be feeding 6 adults with the possibility of feeding more, and leftovers are really nice.
We'll have a couple appetizers before hand. Should I make a veggie to go with the pasta dish? I was also thinking of having garlic bread.
Other thoughts? H's family is no help with this stuff, and like I said if it wasn't for me we'd be having hotdogs and pre-made potato salad. ![]()

If you don't double it, I'd do one and a half times the recipe.
As for veggies, definitely do at least one. Sauteed spinach or swiss chard is easy to pull together. The menu sound heavy-ish and I would be looking for something lighter to accompany the pasta and meat.
I agree - double or at least 1 1/2. Pasta is the one leftover that I really like so I think I'd just make two.
Definitely some sort of veggie - even a quick salad would be great. I'd also do garlic bread or rolls. Carbs are my favorite part!

i agree with thor's suggestions. definitely include a vegetable and preferably a green one. Avoid corn or potatoes if possible (you already have a starch with the pasta).
if you decide to do asparagus it is really easy to make healthily: drizzle with olive oil, add some salt and pepper and bake on a baking sheet for 10 to 12 minutes.
