Need side dish help for Christmas dinner!
I have been so out of whack with my planning, I have no idea what to make! We're doing a Costco spiral cut ham as our main course, and probably green beans with bacon on top with it. I need help with something semi- quick in the oven or on the stovetop, and somewhat simple b/c SD is still a bit picky (though with my dad and grandma there she will probably suffer through it better . . .)
I would appreciate any ideas you ladies are able to share!

Oh, Lisa, I have a great recipe for you! If you and your family likes pineapple with the ham, it's a GREAT side dish.
Pineapple Stuffing (serves about 6-8, you can double it)
5 slices of white bread, cut into cubes
1/2 cup (1stick) of butter, softened
3/4 cup sugar
4 eggs
1 20oz can of crushed pineapple (drained)
With a mixer on med speed, cream butter and sugar. Add eggs one at a time. Stir in pineapple and then fold in bread. Grease cassarole dish and pour in mixture. Bake uncovered at 350 for 1 hour. (if you double it, bake about 1 1/2 hours until set in the middle)
Wow that sounds awesome! A coworker just told me at Thanksgiving time he was making pineapple stuffing, with ham it seems much more logical :-) I will be making this next year for sure when we don't have the kids b/c SD doesn't like pineapple or stuffing :-( I will keep this recipe on file, thank you so much for sharing! I had thoughts of a homemade mac and cheese, or doing cornbread muffins and mashed potatoes so she can have a starch she likes and we can have some variety (she isn't a mashed potatoes fan for the texture). Still some time to think, get more ideas from you lovely ladies and get the shopping done :-)

Jon LOVES when I make them. Also you might need to add a bit of butter/olive oil mid-way through the baking process (in addition to what you put on at the beginning)
Also I've made it with many different dishes so if you are baking the ham at a lower temp just put the potatoes in earlier and bake for longer.

Lisa - I know that you won't be making this since your SD doesn't like pineapple but I must say that this is one of my favorite things - EVER! And is goes great with ham or any kind of pork. Absolutely save this one for future reference.
it's the best - it's almost like dessert. I wonder if you can substitute canned peaches???
