Thor

I was right. It's from the cranberry bag. But in case you don't have it, here's the recipe:

2cups flour; 1 cup sugar; 1 1/2 tsp baking powder; 1 tsp salt; 1/2 tsp baking soda; 3/4 cup OJ; 2 Tbls vegetable oil; 1 Tbls orange zest; 1 egg beaten; 1 1/2 cups fresh or frozen cranberries, roughly chopped;  1/2 cup chopped nuts (i like walnuts best, but pecans are nice too)

Preheat oven to 350 degree. Grease 9x5 loaf pan (don't use a spray. you can taste it) Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in OJ, oil, zest and egg. Mix until well blended. Stir in cranberries and nuts. Bake for aprox 55 mins, or until toothpick comes out clean. Cool on rack in pan for 15 minutes. Turn out and let it cool completely.

My mom's recipe that I've tweaked:

2 cups flour; 1 tsp baking soda; 1 tsp salt; 3/4 cup sugar; 1 large egg, beaten; 2/3 cup milk (whole, not skim); 1/4 cup melted butter; 1 cup whole cranberry sauce; 1 cup chopped walnuts;  zest of 1 orange.

Preheat oven to 350 degrees. Butter and flour loaf pan. In a large bowl, sift flour, soda, salt and sugar. Heat cranberry sauce slightly to un-solidify. Let cool. Mix together butter, milk, zest, and cranberry sauce. Add dry ingredients to wet until everything is just moistened. Do not over mix. Fold in nuts. Bake aprox 45 mins, or until toothpick comes out clean. May take up to an hour, but keep an eye on it. Candied orange peel is really nice in this mix as well.

Enjoy! :)
