Christmas cookies... what am I missing?
Hi all,
So I have decided to revitalise my Christmas/Chanukah cookie baking plans from a million years ago and make tons of cookies. We're hosting two couples for Christmas Eve / Chanukah plus have rented a house with 14 friends for a week over New Year's so I can't really make too many! I'm just in a baking mood...
So far on my list:
Rugalach (a Jewish rolled pastry thing with chocolate or apricot jam or nuts)
Sugar cookies decorated for Christmas / Chanukah
Bourbon balls
Peanut butter cookies (just craving them!)
Oatmeal Chocolate Chip cookies
Seems like I need something else fruit oriented? Anything else missing (double bonus if you have a favourite recipe!)

Ginger snaps as something completely different.
Here's my favorite recipe (sorry for the weird large font, am on Safari and copied it from my blog):
3/4 cup unsalted butter1 cup sugar1/4 cup molasses1 egg2 cups flour2 tsp baking soda1/2 tsp salt1/2 tsp cloves1 scant tsp ginger1 tsp cinnamon1 good pinch of finely ground (powdered) black pepper Cream butter and sugar, add the molasses and the egg, then sift in flour, baking soda, salt and spices and mix well. Shape into balls and roll in sugar (do not flatten) bake on an ungreased cookie sheet at 350 F (175 C) degrees for 10 ? 12 minutes. If you like them even spicier (try one cooled of cookie first!) add some more ginger and pepper to the sugar which you toll the dough in. Cool on cookie sheet for about 2 minutes, then move to rack for complete cooling. As with all cookies, a shorter cooking time will give you a chewier, softer cookie. TRAIL MIX COOKIE RECIPE
1C. Chunky All Natural Peanut butter
1C. Sweetened Coconut Flakes
1/2C. Semi-Sweet Choc. Chips (or chunks, white chips, etc.)
1/2C. Packed Dk. Brown sugar
1/2C. Dried Cranberries
1/2C. Chopped Dates (I never added these)
1/4C. Sunflower Seeds (I added more than this)
1/4C. Maple Syrup (I used all natural)
1 Lg. Egg
? tsp. Vanilla
? tsp. Baking Soda
? tsp. Salt
Preheat oven to 350 degrees.
Place all ingredients in mixer bowl and mix on medium speed until all ingredients are well-blended.
Drop generous Tablespoons of dough onto stick resistant cookie sheets, or use parchment paper.
Bake 12-14 minutes until cookies are set but still soft.
Let cool on cookie sheet.
Yield: 1 recipe = approximately 24 cookies.

I'm not a peppermint lover but I always make them because their nice pinkish red color makes the cookie tray look really pretty -- otherwise it can look really brown.
