We really enjoyed Mon Ami Gabi at Paris. We sat out on the patio with a perfect view of the Bellagio water show.
We also really like SW Steakhouse in the Wynn.
Mon Ami Gabi @ Paris, Prime and Fix @ Bellagio, Sinatra's @ Encore, Capital Grille @ Fashion Show Mall.
For more casual places I like Serendipity 3 @ Cesars, Burgar Bar @ Mandalay, and Grand Lux @ Venetian

BLT Burger at Mirage

Those would be my 2 favorites for a nice meal... there are definitely nicer/pricer places but these are pretty solid. Not sure what your budget is/what you are looking for. N9NE (Palms) is also very good if you are venturing off strip.
I also really like the Wynn Champagne Brunch. Mon Ami Gabi is good for breakfast/brunch.
More casual, I've always enjoyed Margaritaville at 2AM! Grand Luxe is tasty too.

Another vote here for Fleur. I'm actually in Vegas right now (Taking a little afternoon break) and we had lunch at Fleur that was amazing. My personal favorite was the onion soup with truffle oil shooter, and I even enjoyed my very first oyster shooter (I'm not a seafood person...).
Another personal fave in Vegas is Sushisamba at the Palazzo. They have been amazing every time we've been there!
Our favorite meal from our most recent trip was at Fleur. We actually got a gift cert on restaurant.com
Mesa Grill was our second fave. We had brunch there one day and lunch another day.
Burger Bar was a fun sports bar type place. Can we say beer ice cream floats?? Yum.
Mon Ami Gabi had a nice breakfast.
I wasnt impressed with Olives. Loved the view though.
