WonderRed - I know you sent me the recipe for the butternut squash soup (the one with curry) a while back, and I lost it.
Can you resend it -- or does anyone else have it?

Good heavens, I've been making it so long I don't use the recipe any more and just wing it. Let's see...
Prep the curry and onions while the squash is roasting. Chopped onion, curry & butter. Cook it together in a skillet.
Half and roast a BN squash with olive oil until the meat is cooked pull out the meat and puree it in the blender with cream or milk until it's nice and creamy and smooth. Don't add so much cream/milk that it's watery. Put it in a soup pot with chicken or veggie broth (as much or as little as you want to get the texture/thickness you want) & the curry onion mixture, mix it all together and cook/heat.
I like to top it with a dab of sour cream.
Sorry that's the best I can do. I start with recipes and once I get comfortable with it, go out on my own and do everything to taste. Hopefully someone can give you the actual recipe if you aren't comfortable with this.
Thanks! This works for me - I couldn't remember what to do with the onions. I think I modified the original 'recipe' you gave me anyway.
Last night I was tired, and by the time the squash was done in the oven I'd already had 2 glasses of wine. They're still in the fridge, waiting to go...
