Christmas Breakfast

Any wonderful recipes for Christmas breakfast? We're having my parents and brother over, but are planning to attend midnight mass on Christmas Eve, so the easier the better (I don't want to get up super early!).

My dad is allergic to whey, so any dairy is out for him (and I still have to be careful with labels). I need at least one substantial thing he can eat. 

I was thinking an egg fritatta/casserole, but need one without cheese or milk (I could use soy or almond, but don't know how well that will turn out).

    I did a crustless quiche for brinner the other night. I used almond milk (Brian drinks soy, I drink almond) and we did not taste the difference at all. I also used all egg whites instead of eggs and we really liked it.

    FWIW-I used almond milk when it called for milk for all my baking/cooking recipes this year and I have not noticed a difference.

    and do not use soy cheese...it does not melt well and leaves a funny aftertaste, imo

    A crustless quiche would work (or one with a crust).

  • Christmas breakfast for the past 8 years has been Sausage gravy and Biscuits.

    Sorry - no help with the non-dairy.

  • I'm looking for something myself so no help there, but I did want to say that I substitute soy milk for a lot of cooking/baking now (Patrick is allergic to cow's milk) and I haven't had an issue yet.

  • An egg bake would be good -- I don't have a recipe, I only whisk together a bunch of eggs, a splash of milk/half and half/cream (they do sell dairy-free evaporated milk -- not sure what it would taste like, but I have used regular evaporated milk in egg casserole before), throw in some shredded potatoes, ham, peppers and onions!
