Surprise!

My moms birthday was the 20th. I thought it was the 22nd... so I was skyping with her when my dad said something. I felt like a total a$$. My parents are flying in on the 31st. I'm picking them up from the airport and will get home right around dinner time. I want to surprise her with a nice homemade dinner, dessert, and a gift. The question is... what to make for dinner? I need something I can do the prep work ahead of time and finish cooking fairly quickly. She doesn't eat red meat and I'm allergic to fish.

  • Turkey taco bar and chips and guac? Have all the fixins assembled ahead of time and you'll just have to cook the ground turkey. Chicken enchiladas with sides would be easy too - assemble it ahead of time and throw it in the oven when you get home.

  • I just lost my reply. I would probably do something in the crock pot like a pork roast w/ potatoes and carrots if she eats pork, or vegetarian chili or white chili w/ cornbread. You can make just about any kind of soup in a crock pot. You could prep a lasagna ahead of time and just bake it when you get home. You could do homemade pesto ahead of time too. I like warm, comfort foods this time of year. Can you tell?

  • What about something you can do in the crockpot ahead of time? I make an apricot pork tenderloin in the crockpot that is so, so yummy and can be sliced and plated to look fancy & pretty, but everything is done way ahead of time and it's really easy. Or you could do stuffed shells (I have a spinach & sausage recipe that's awesome), you can make them way ahead of time and then just bake, with salad and garlic bread.

  • I would probably do lasagna or stuffed shells and pop it in the oven when you get back (or have your SO do it before you return if he's home). My mom is flying in today and I was trying to come up with something similar to prep ahead for dinner, but I decided to just buy tamales. Smile
