I just had an anxiety breakdown over my cheesecake I am making for dessert tomorrow and decided to throw a cake in the mix in case my cheesecake is a flop.  What did you decide for the buttercream frosting?  Did you do peppermint extract too?  Also, your buttercream frosting seems to have a reputation....do you share that recipe?  No pressure if not!

  • I'm having major chocolate cake anxiety!  When my computer was re-imaged, I forgot to save all my links so I'm feeling a bit lost. I know I always look for the most simple recipes because I am not into complicated cooking (and honestly, I just think simpler is usually better). As for the frosting, I always make a basic buttercream with butter and powdered sugar and vanilla, and a little milk if it needs it for consistency.  I'll use this recipe:

    I'm going to make 2 layers of chocolate cake and cut them in half, so 4 layers total. I'll layer chocolate cake, frosting, Andes mint pieces, next layer of cake, etc. I need to make the cake today but might chill it overnight and wait until tomorrow morning to make the frosting and assemble it. I haven't tried the peppermint extract yet. I'm also not sure if I should leave out the vanilla extract if I use peppermint extract.  I think I'll just experiment and make some with vanilla and mint, some plain, and some with just mint and do a taste test.  Let me know how yours turns out!

  • Thanks!  I totally stole your idea but I am super excited to try it. I just had to re-do my cheesecake because I forgot eggs the first time around.  Yep.  I looked in to make sure the cheesecake was getting firm, and instead it was bubbling.

  • Oops, yeah I don't think cheesecake is supposed to boil! Sad

    I'm going to start the cake now. Hopefully it'll turn out ok!
