*sigh* I'm a hopeless cook. Please help!
So, Brody's 2nd birthday is the day after tomorrow (yikes!!) and I'm serving Mexican food. I want to offer both ground beef and chicken for the taco bar, but how do I make chicken for tacos??? :::hangs head in shame:::
ETA: The party is at 11am, so do I have any options for cooking it tomorrow night and re-heating the day of the party?

Absolutely. For chicken tacos I usually slice chicken breasts (but you can use dark meat or a combo if you prefer), and saute them until cooked through. Then I just add taco seasoning and a little water and simmer until the water evaporates. Just like tacos with beef. I use a mix from Penzy's Spices, but if you have your own favorite, I would just use that.
As for reheating, you could just microwave it with a few drops of water or you could brown the chicken the night before, then the morning of reheat it in the pan and then add the seasonings then.

This is what I'd do. You can also bake, shred, and then make heat them up on the stove with a bit of water and the taco seasoning.

I have used ground chicken in the past and it works quite well or I have also sauteed chicken breasts on the stove and then cubed them into very small bite sized pieces (I know others who will pull the chicken apart with a fork instead, but I find that you can get tough pieces that are hard to bite into that way)

Gotcha! I think I've had tacos twice in my life and they've only had ground chix or turkey or it was a fish taco. I have no frame of reference.
