What do you pack for lunch?
I've done pretty good this year with packing my lunch, which was one of last year's resolutions. However, if I don't have leftovers from dinner, I'm usually at a bit of a loss, so I end up making pasta salad quite a bit. Inspire me - what do you usually bring for lunch? Bonus points if it's vegetarian or can be adapted to be meatless.

Haha, I was going to suggest leftovers.
Some other good things are popcorn, crackers and cheese (maybe even cheese ball, you could make one over the weekend and they last a long time), string cheese, baby carrots and other raw vegetables, apples and other fruit, granola and yogurt...and there's always DH's old standby, PB&J. Or you could make a big batch of soup or chili over the weekend and freeze it for future lunches.
ETA: How could I forget hummus? Also, pimento cheese (if you're a weirdo like me
).
This is a resolution of mine for this year as well. Last year I did a terrible job at this.
This is my lunchbox today:
PB&J, cheese stick, yogurt, carrots and hummus, banana, apple, and orange. It's my absolute favorite lunch so it makes an appearance a few times a week.
I also love soup or chili for lunch this time of year (salad in summer).
Do you have a toaster oven? I make DH paninis at home and he reheats in one and says its almost as good.
I used to pack my lunch really well and plan ahead to make various sandwiches and salads and what not. Since having C and prepping all of his food too, I just don't have the energy, so I rely on leftovers most of the time (I bascially cook dinner for 4 every night, which is enough for the 3 of us to have for dinner, plus a toddler lunch and my lunch).
My emergency lunch is an Amy's frozen Mac n Cheese plus a baggie of frozen veggies that I mix in after microwaving it. That's really saved my butt a few times. I should do the same with low sodium canned soups but I never think to buy them.
Today I have yogurt, hard boiled eggs, turkey sausage, salad, fruit, carrots and salsa - this is my breakfast and lunch.
I made this bean salad for Christmas and it was a HUGE hit. Personally, I preferred it without the feta. I could easily see taking that as leftovers for 2-3 days.
I've never been a huge fan of leftovers for lunch. I can't explain it. If I can muster it though, I'll sometimes bring a bowl of leftover chili or a slice of leftover (homemade) pizza. I never go out of my way to make extras for my lunches though. I'd rather have a night of no cooking than an easy lunch!
Today's morning snack/lunch: PB (sometimes with honey) sandwich, fruit salad, clementine, baby carrots/green pepper strips, yogurt, Wheat Thins, piece of dark chocolate.
Hubz makes his own lunches (thank goodness) and he always has something from each category: sandwich (PB&J, turkey), fruit (apple, orange), veg (baby carrots), dairy (yogurt, string cheese), crunchy (Wheat Thins, Cheezits), sweet (cookie, piece of candy).
Could you make hummus/veggie/cheese wraps/pita pockets? That would be yummy.
But take this with a grain of salt. My old boss used to call my lunches "sad sandwiches" (of course, he could afford to eat at The Palm every day if he wanted to).

I often make soup in the winter and take that at least twice per week. Yesterday I made a white bean and greens soup- it's white kidney beans, diced tomatoes, onion, garlic, orzo, and escarole (I use spinach). I got the recipe from Express... can't find it on their site right now, but I can post it when I get home if anyone is interested.

If I don't have leftovers or time to make anything special, I'll bring a salad, can of soup, sandwich, or frozen meal. My favorite frozen meals are Kashi and Healthy Choice Steamers- the vegetable mediterranean one is actually quite good for a frozen meal.

Veggies, hummus, yogurt and fruit
sandwiches (my favorite vegetarian lunch sandwich is also best prepared ahead! peanut butter on one slice, honey on the other, slices of banana and raisins in between. prepare ahead and store in the fridge until lunchtime!)
soup (i try to avoid canned b/c of the sodium content. when i make soup for dinner, i doulbe the batch and freeze individual sized servings that can be taken for lunch).
