Whats for dinner at your house?
I tried a new recipe tonight from skinny crockpot. Its balsmic chicken
over pasta. It looks good and smells good so far. I will let you know
how it is after we eat.

DH is making Rogan Josh with the purpose of having enough left over sauce to can a bunch for later.
emma - share your spaghetti sauce recipe?? I'm thinking we should starting making this too!
I am hoping to make some more salsa to can later this week too. Cause, ya know, salsa will be high on the post-baby priority list
We make this every year with veggies from our garden and it completely blows away store-bought sauce. It's easy to alter to your tastes, too, and it makes your house smell amazing for a few days.
Spaghetti Sauce
1/2 bushel tomatoes, juiced (yields approx. 2 gallons of juice), plus 5 C. chopped whole tomatoes
3 lbs of onion, processed through grinder or food processor
4-6 large green peppers, processed through grinder or food processor (We also throw in a few hot peppers)
4-6 cloves of garlic, crushed
2 Tbsp. dried basil
2 Tbsp. dried oregano
1 pint vegetable oil (We use slightly less)
8 cans tomato paste (We sometimes use more if the juice is really thin)
1-1/2 C. white sugar
1/2 C. salt
-Mix oil, ground onions, ground peppers, and garlic in large pot. Cook 30 minutes.
-Add tomato juice & chopped tomatoes, tomato paste, sugar, salt, and spices to onion mixture. Bring to boil, then reduce heat. Simmer several hours until desired consistency, being sure to stir occasionally.
-Freeze or can in hot water bath to preserve.
When simmering, be sure to use a thick, good quality stainless steel pot. Aluminum can alter the flavor & color of the sauce because of the tomatoes' acidity. Also, using a low quality or thin-bottomed pot may cause the sauce to scorch since it is simmered for so long that it is impossible to constantly stir it the whole time. We made that mistake one year, and the whole batch was ruined. It looked fine, but it tasted burnt.

I found this amazing coconut chicken receipe that is our new favorite meal. I made a big garden salad to go with it.
