I've been probably half a dozen times, but that was during jr. high/high school so my parents planned everything.
We will probably get a rental through VRBO but I'm looking for restaurant recs, spa recs, things to do, etc. I will be 6 months pregnant so many of the outdoorsy things will be off limits.

Would you be able to snowshoe? There's a track that's pretty flat and tamped down that wouldn't be too strenuous.
My favorite restaurant is Mi Casa, even if you can't get the margaritas. For a nice place, Heathstone is always a recommendation. There's an udon restaurant on main street that's really good.
Will you guys have a car? Or will you be reliant on the a shuttle?
We are going Memorial Day weekend so I think most of the lower elevation snow will be melted.
We are going to rent a car to get from the Denver airport down there. All the things I've done there before may be difficult or off limits (alpine slide, biking, hot tubbing!)

I just went for my first time this summer and loved it! Some recs: Eric's pizza (we demolished a gigantor 28" pizza after hiking), Mi Casa (a second rec; the food was delicious) and Breck Brewery.
I also found some killer deals at Big City Blues on some "designer" clothes; although if you're PG, you may not be interested:O)

We loved Mi Casa and Breck Brewery. We also loved Mimis Fried Pies (I think that's what it's called). So good!
I know you said you wanted to book a place through vrbo, but I wanted to suggest that you check out Mountain Thunder Lodge. It was an awesome location plus they offered a free shuttle to/from town (but you could walk if you wanted, we just had our babies with us and preferred the shuttle). We always go through vrbo for trips like this, but we decided on MTL and it was perfect for the 6 in our group (4 adults and 2 kids).
I'm a bit late here but...
I love Rasta Pasta. Also, there is an EXCELLENT massage place (pretty sure they do pregnancy massage if you are into it) in the little shopping area that is near the Marriott. I wish I could remember what it's called...if I think of it I'll send you a message.
