Potluck ideas?
H and I were just invited to a potluck tomorrow night.
Background: It's a small last minute thing being put together by someone we met at a friend's birthday party - we've been chatting on fb but haven't seen her since. Anyways, she's inviting everyone over because she wants to make beef stew, but only knows how to make a lot, and it's just her haha.
So, our "standby" dish is H's baked potato salad, but that doesn't seem very beef-stew-side-dishy. Any ideas on something else we could whip up?

Cornbread, Hot Rolls, I think some sort of starch should go with it. Or, if you want to do a veg, roast or grill some corn ears. Yum!

His baked potato salad is something he made up when he got the "Bring potato salad" card to a potluck forever ago. H HATES mayo, so he decided to make this salad up.
Basically cut up and boil potatoes like you would for a potato salad, then add sour cream, chives, bacon bits, cheese, etc....basically all the fixin's you would put on a loaded baked potato, and mix and serve
not very healthy, but it's freaking delicious

um, this sounds amazing! I love regular potato salad (my mom's recipe though), but I would eat this any day!
