what's your latest or most recent meal plan?
I know I'm stealing SK's thunder here, but I have no idea what to make this week or next week and meal planning was one of my resolutions!
Re: what's your latest or most recent meal plan?
Our meal plans have really sucked since at least one of us works on the house every night.
Last night: PF Chang's firecracker shrimp frozen meal
Tonight: Carry out
Tomorrow: Crock Pot French Onion Beef
Friday: Probably leftovers
Saturday: Crock Pot Chicken Cacciatore
Sunday: Kielbasa & Potato Bake
Monday -leftover ham and mashed potatoes
Tuesday-lasagna with sauce not from a jar (I was so excited!)
Tonight-leftover lasagna and frozen pizza for the kids
Thursday - cream cheese chicken in the crockpot
Friday - pepperoni roll
Saturday - mac and cheese (a fancy version with bacon and different cheeses) with some sort of meat because I have a feeling it will be really rich
Oh, these recipes all sound good! Can you share the recipes?
I need to be better about meal planning for longer than a week. I should really plan it out for two weeks so I only have to search for recipes 2x/ month and not make quite as many shopping lists. I also really like having leftovers so when I get home late, I don't have to spend all night in the kitchen...
Monday/ Tuesday: Braised short ribs with penne and a salad
Wednesday/ Thursday: Drunken risotto with sausage and a salad
Friday: Out with friends
Saturday or Sunday: Stracotto (Italian pot roast) and creamy polenta
Feel free!! I never remember to post this. I will try hard next week.

This week has been a mess. I planned:
BBQ chicken, mac & cheese, green beans (this didn't get made because we had a long day with DS and I was too tired).
Baked ziti (went to make this last night and realized I forgot to buy mozzarella cheese, so I had to make shells & meatballs instead).
Chicken enchiladas (hopefully tonight).
And...that's it for this week. Hopefully we can get back on track next week.

Sun: Turkey meatloaf, green beans and mashed potatoes
Monday: Stuffed Shells
Tuesday: Stuffed Shells leftovers
Wednesday: DH has a work meeting so I'm on my own. I don't think I can stomach stuffed shells again so I'll probably just scrounge something else up.
Thursday: Honey glazed salmon, warm bean and corn salad
Friday: Taco soup and quesadillas
Saturday: Either out somewhere or I'll make something simple like breakfast for dinner
Someone's getting a little brother!
Monday: Early dinner out for DH & I, DD got McDonald's
Tuesday: Waffles & Sausage
Wednesday: Goulash, Parmesan Broccoli, Three Cheese Garlic Bread
Thursday: Creamy chicken taquitos, Sour Cream Yellow Rice, Sweet Corn Cake
Friday: Herb-Roasted Turkey Breast, Roasted Garlic Mashed Potatoes, Stuffing, Dijon-Braised Brussels Sprouts, Yeast Rolls
Saturday: DH will be at gaming, DD and I will be at a friend's house
Sunday: TBD - probably leftovers
Monday- Chicken Enchiladas
Tuesday- Sloppy Joe and mac and cheese (first day back to work and I was lazy)
Wednesday- Linguini with sausage and peppers (I think I've made this before and didn't like it, but I'm trying it again)
Thursday- Jerk chicken legs, fried rice, and broccoli
Friday and Saturday- I don't remember!!
I almost drool on my keyboard when I read your meal plans.
Is it sad that I can't remember what we ate on Sunday-Monday?
Sunday: Dinner at IL's.
Monday: Taco's
Tuesday: Pizza
Wednesday: Leftover Taco's
Thursday: IDK
Friday-Saturday: IDK
We started out strong - Chili on Monday, but that was the end of that. Last night we had those deep-fried macaroni & Cheese balls that you bake in the oven from Trader Joe's and broccoli
Tonight - baked ziti with spinach (I hope)
Tomorrow - breakfast for dinner or black beans/refried beans, rice and guacamole
Friday - probably pizza
Trying to get back into the meal planning mode but Monday was a flop...
Monday- pizza
Tuesday- chicken in cream of mushroom sauce, brown rice, cauliflower
Wednesday- oven baked cod, steamed veggies, garden salad
Thursday- grabbing subway before my prenatal yoga class
Friday- sausage & peppers
Saturday- dinner with friends
Sunday- turkey burgers with lettuce wraps
I'm definitely making goulash next week! DH said his grandmother used to make it but called it American Chop Suey. It sounds like the same recipe but I'm going to try making it with only ground turkey.
Sure!

I always substitute the wine for beer and I cook it longer (more like an hour and a half) and then put the broiler on for a few minutes.
For the chicken cacciatore, I just toss chicken breasts, a big jar of spaghetti sauce, some crushed garlic and a sliced onion into the crock pot for about 7 hours on low and then serve over egg noodles. You could also add a green pepper and mushrooms if you'd like.
I've been horrible about making meal plans lately, but here's what we've had this week:
Monday: Out for dinner at Cantler's
Tuesday: Cheeseburgers with sauteed mushrooms and zucchini
Wednesday: Copycat Alice Springs Chicken, mashed cauliflower, asparagus
Thursday: Broccoli-cheddar soup, tilapia
Tonight: Bacon-wrapped scallops, salad, and I"m not sure what else.
