Rec your (paper) coupon organizer?
I'm looking for a good organizer...I'm not "extreme" so I'm not going to use a binder, I need something that will fit in my purse, and is easy to keep open and look through considering I have a baby with me when I'm shopping. Any recommendations? The plastic ones I find at Target are usually really hard to keep open so they annoy me...

This is what I have too.
I know what you mean about them not staying open well... But after you break it in after a couple months, you'll be able to fold it back some. IMO a plastic one is better any way because a paper one will tear up as you pull out and put it in your purse.
If you're dead set on paper, try a dollar store.
