Crock pot virgin- what to cook first?
I have two crock pots that have sat in my cupboard for 3 years.... It's time to pop my crock pot cherry.
Please share your favorite (easy) recipes!
Brown sugar chicken (stolen from menu planning thread) sounds delicious!
Re: Crock pot virgin- what to cook first?
Brown sugar chicken is super easy! I'm terrible at the crock pot (though I'm hoping it was just my old crock pot and my new one will be better), and the brown sugar chicken always comes out yummy. I like apricot pork tenderloin a lot too, and Dr Pepper pulled pork (the leftovers of this makes awesome nachos too
). Here's my recipes:
Dr Pepper pulled pork
Pork tenderloin or pork roast
1 can Dr Pepper (can use cola too)
1 t cinnamon
salt & pepper to taste
- salt & pepper the pork to your preference
- add can of soda
- cook on low, 6-7 hours or until pork shreds easily
- shred and use however you'd like, add BBQ sauce for BBQ pulled pork, use in tamales, etc
Apricot Pork Tenderloin
1 can (10.5 oz) chicken broth
1 jar (18 oz) apricot preserves
1 large onion, chopped (I omit, I don't like onions)
2 T dijon mustard
4 lbs boneless pork loin roast (can use smaller, I usually do ~2 lb)
- mix broth, preserves, onion & mustard in crock pot
- add pork, turn to coat
- cover & cook on low 8-9 hours
- once cooked, remove some of the sauce and thicken with corn starch - pour thickened sauce over sliced pork.
Brown Sugar Chicken
1 large chicken, cut into serving pieces (I usually use ~2 lbs of thighs)
1 C packed brown sugar (can easily use less, it's pretty sweet)
2/3 C vinegar
1/4 C sprite or 7-Up (any lemon lime soda will work)
2-3 T minced garlic
2 T soy sauce
1 teaspoon pepper (black or cayenne)
- place chicken in crock pot
- mix all other ingredients together, pour over chicken
- cook on low for 6-8 hours if using bone in chicken, 4-6 if using boneless
- can thicken sauce after cooking to pour over
* I usually double the sauce amount and serve with rice & sugar snap peas
No more baby siggie pics. Boo.
On my menu this week:
2 chicken breasts
1 jar teriyaki sauce
1 can cubed pineapple
Put it all in and cook on low for 6-8 hours. We added a diced red pepper in the last hour. Serve over rice.
Sounds good!
This was going to be my suggestion as well. If you want, you can add frozen corn to this as well. I also add a dash of cumin, but it's not necessary.
My favorite easy crockpot meal is: put pork tenderloin in crockpot w/ 1 jar 505 green chili. Cook on low all day and use meat for pork tacos
This week we're having crockpot french dips and crockpot cilantro lime chicken
Last week we had crockpot creamy chicken and wild rice soup

This is how I make mine too! We also made this last week... it is so yummy.
Last week I also make beef stew in the crock pot
Put 1lb of stewing beef, chopped up carrots, celery, potatoes, and onion in the crock pot. Add 1 or 2 cans of cream of mushroom soup on a can of stewing tomatoes. Cook on Low for 8 hours. It is so good. It is my DH's favorite!
And dinner is in the pot. TYVM!
Easy: bottle of your favorite BBQ sauce, some water if needed and chicken breasts
Medium work: Pot roast. Chuck roast and salt and pepper on all sides then sear it in hot oil in a dutch oven on all sides. Throw into the same pan some onions (I just cut in quarter so it is easier to fish out the chunks when over), carrots and I also throw in potatoes (skin on, cut in quarters) and 2 ribs of celery to brown briefly. Deglaze the pan with beef broth (I just use better than bullion beef (extra) with water) and red wine, plus minced garlic and rosemary or whatever herbs you like. Layer into the crockpot in the order you browned them and cover with the liquid and cook on low for about 8-10 hours. The first part kind of follows PW's pot roast recipe.
I just got for Christmas the America's Test Kitchen slow cooker recipe book and man are there some good looking things in there plus some great tips (did you know that generally for most crockpots you will have a "hotter" side and they recommend making an aluminum foil collar to help control heat on the hotter side?). Let you know what I find out!
