UK INs, or anyone else for that matter -- after 8 months in the UK, I've decided that I love sausage and mash, and should start making it at home. Problem is I have no idea how to.
Okay, the sausages I could probably figure out. Our local butcher always has fresh sausages. Would you just grill? Boil then grill? Boil in some kind of fun beer?
The mashed potatoes I could figure out, but I've never made them before, and would love a lower-fat version of the mashed potatoes that my mom always makes. Also, some mash that I get in pubs has mustard seeds mixed in. Do any of you do this? Is it as simple as mixing in plain mustard seeds, or is there more to it than that?
And what about the gravy? It usually has onions and sometimes mushrooms, but it is BEEF gravy? Pork gravy?
I have some Jewish friends who just moved here, and I would LOVE to make them a somewhat kosher version of this (with non-pork sausages and no dairy in the mashed potatoes). Has anyone ever made this with any other kind of sausage (beef, turkey, chicken?). Otherwise I don't think they'll ever try it because all of the pubs around here only have pork sausage...

I have made bangers and mash before, but I am not sure if you will like how I make it. I have only made it with pork sausages, but if you can find non-pork sausages go for it.
As for cooking them, I have not grilled them. I put in a little bit of oil, with chopped onion and mushrooms. And cook them until they are browned on both sides. I put a lid on so there is not oil frying everywhere. Once they are browned on both sides I add vegetable stock to it (you can use your beer here) and then thicken up with a little bit of flour. That is my gravy. I know lots of Brits that just use Bisto fake beef gravy.
As for the mash, I have never had mash with mustard seed in it, but that sounds so good. Man, I need to head south sometime and have some food. Boil the crap out of the potatos. Mash them with a little bit of the water that they were boiling in so you get the desired consistancy and add salt and the mustard to your liking.
Serve with peas on the side. I don't really like peas, but DS loves them. I have some other green veg like green beans.

You can fry (shallow/saute) or grill the sausages. I've never heard of boiling them?
Mash can be made with either both milk and butter/marg, or just one. I tend to use marg as that's aht my family likes. Before kids (who don't like mustard) I'd put a dollop of whole-grain mustard in (hence hte seeds) - yummy.
I don't do gravy with mine, but if I did, it'd be onion/veg Bisto.

I'm Jewish and grew up keeping kosher. Do you know how kosher they are? My brother won't eat any meat at all outside of his / other Jewish homes.
anyway, in case I'm not too late on this - DH makes versions of this all the time, there's really no bad way to do it. We use turkey sausages sometimes (he pan fries them) or quorn sausages even. there's a place near here that does like 20 different combinations for bangers and mash and they are all delicious :-) Whatever gravy recipe you usually use would work well. And I love whole grain mustard in mashed potatoes, yummy!
