So as I'm sitting here thinking about my boring lunch, it got me thinking about dinner and how i'm kind of in a rut for dinner too!

I made this last night (except with 2 cans of corn instead of grilled corn on the cob) and nachos, so we'll be having left overs again tonight. I really wanted nachos for dinner, but felt like we needed some veggies to make it healthier, so that was my compromise.

Boring old pasta and garlic bread for us.
We are having BBQ beef sandwiches tomorrow and probably pork chops on Wednesday.
Here's my menu for the week:
M- salad with tons of chopped veggies in it for me. Tuna in it for dh.
(Need recommendations for a place--- Northville near 6 mile and Haggerty)
T- it was Creamy chicken noodle soup but I think I'm going to do a Kale, Sausage and Bean soup instead with homemade wheat bread.
W- homemade pizza (buffalo chicken for dh, veggie for me, cheese for the kids)
T- chicken marinade with noodles (usually use steak but keeping it on the cheap)
F- fish and veggies and some rice
S- not quite sure yet, probably left overs of some kind
Sunday- chinese take out or out to dinner for chinese

Losing it...Without Losing it
Red Skin potatoes, boiled, smashed drizzled with Olive Oil sprinkled with sea salt/pepper and I put parsley on top then baked to crisp them up.

No clue for dinner......yes, it's almost 5pm......mac & cheese probably for the kids, not sure about me (I'm not a mac & cheese gal), but the kids have leftovers of it
I ended up with BLT's (turkey bacon for me, real bacon for DH... he's not a big turkey bacon fan...)
Delicious! And super healthy!
Tomorrow I'm going to try a new recipe. Low carb pizza. It should be good! (not the healthiest though!)

If you decide to make it soon, here are two notes:
1) Soak the lentils over night, then rinse them before you add it to the stock (it brings out the most nutritional value in the lentils)
2) Wait until the last step (the list simmer for 5 minutes) to salt the stew to taste. This will prevent the lentils from getting bitter and tough.
