I'm including this past weekend since I did a lot of cooking, and I don't have too much planned for the rest of the week.
Sat - My healthy version of Chipotle: Barbacoa beef, cilantro lime rice, and corn salsa
Sun - Tarragon Chicken, Garlic Rice Pilaf and leftover corn salsa
Mon - Crockpot Bolognese over Rigatoni and salad
Tue - DH has to work late so I'll probably eat leftovers.
Wed - dinner at my parents'
Thur - either leftovers again, or something from the freezer
Fri - TBD, we're leaving for a weekend away, so I probably won't be cooking
Monday: Macaroni and cheese with meat
Tuesday: Chicken with rice and kale
Wednesday: American chop suey
Thursday: Ground chicken and cheese quesadillas
Friday: We're going away for the weekend, so we'll probably eat out
Sun - Chicken Taquitos, Veggies and dip
Mon - Buffalo Chicken Chowder, Bread, Salad
Tues - Coconut Chicken Salad, Bread
Wed - Linguini w/ Tex Mex Pepper Cream Sauce, Spinach Salad
Thurs - Smokey BBQ Chili, Jalapeno Cornbread, Salad
Fri - Out or Braided Spaghetti Bread, Salad
Sat - Leftovers

We are leaving on Wednesday for Disney (!!!) so we don't have much planned for this week...

Wednesday: possibly my grandparents... if not, then I'm thinking baked ziti
Thursday: M is oot, so leftovers for me
Friday: Date night
Saturday: Nada. M is oot.
Monday: Penne with spicy Italian sausage and mushrooms in a tomato sauce
Tuesday: DH has a meeting so I will probably just have left-overs or a sandwich or something
Wednesday: Tacos!
Thursday: Taco salad with the leftovers
Friday: Corn chowder (my new recipe for the week) and biscuits
I never have anything to add to this because my meal planning is going to the freezer after work and deciding what to defrost...
However, I just downloaded an app called allrecipies. AWESOME. Thought I should share.
Mon- Braided spaghetti bread
Tues- Keilbasa with garlic fries (if I make them right)
Wed- Chicken Mac & Cheese
Thurs- Turkey Tacos
Friday- Leftovers

I think this week is about cleaning out the freezer/fridge. I have clam chowder, one tomale, chicken, pizza dough (gonna use for braided spaghetti), ham so I think I'll make the following:
"Red Chicken" (like an enchilada flavored chicken but not enchiladas... watching the calories) with grilled peppers/onions, brown rice and some green vegetable.
Braided Spaghetti with chicken sausage or ground turkey OR pizza with sausage, ham/veggies
Either a quiche or cheesy scallopped potatoes w/ham
Need to incorporate some fish (yummy omega-3s) so we'll see what is on sale at the store.
With it being just me, it's cool b/c whatever is leftover is lunch the next day... TWOfer!!

Crystal, have you checked out www.skinnytaste.com? Just wanted to recommend it because you mentioned watching calories in your post. Her recipe for chicken enchiladas is great, and I just bookmarked one for scalloped potatoes that I'm going to make next week.
