  • Sun- we had a late lunch at Percy Street BBQ, awesome ribs!

    Mon- turkey roll ups, mash, corn

    Tues- whole roasted chicken, brown rice, roasted broccoli with lemon

    Wed- I have four eggplant I need to use, any suggestions besides eggplant parm? I planned on just sauteeing it with some red peppers, onions, and garlic and making a white wine sauce to put over pasta but I have no idea how this will turn out

    Thurs- pot roast in the crock for the crew, Mamma is going out with the girls

    Fri- dinner out again

    Sat- ?

    you can cube up the eggplant, roast or sautee with garlic and a can of diced tomatoes for a good sauce too.  i like eggplant rollatini (at least that is what we call it), but its basically a twist on parm.  fried (or not) eggplant, rolled with proscuitto and a ricotta/spinach mix, top with some sauce and mozz cheese and bake. 

    i have been so awful with this lately and we are on vacation at the end of this week so i am going to vow to be back on 1/17 with some dinner ideas.  yep- i said it in writing now i will have to do it.

  • yes! i have a can of san marzano tomatoes that i forgot to mention too. should i take the skin off the eggplant? i love rollatini but i dont have time to make a sauce. Plus not sure if anyone else will eat the actual veggies so if I put it over pasta, they can at least eat that

  • i'm lazy so no skinning for me.  both ds and dh like eggplant and don't seem to mind the skin.  roasting it for a bit before you add the tomatoes might help with any bitterness too.   

    keep an eye on A if you let her have some so the skin doesn't get stuck in her mouth.  i let ds go to town on a piece and just grab it from him when there isn't much left but skin.

    Tuesday: Meatloaf with peas and potatoes.

    Wednesday: Lemon roasted chicken with smashed carrots

    Thursday: Probably leftovers

    Friday: Pan fried fish with rice and salad.

    Saturday: Roast beef hash for brunch, shrimp and lemon risotto for dinner. 

    Sunday: White beans with sausage and kale

    Monday - roasted chicken, stuffing, green beans

    Tuesday - chicken stuffed with broccoli and cheese, roasted veggie, roasted potato

    Friday - order out or go out

  • You folks are amazing. 

    Sunday - I made lemon basil chicken with carrots in the crockpot, but the chicken wasn't cooked so I just ate a salad and brown rice (which were supposed to accompany the chicken)

    Monday - a bowl of cereal.  again I was supposed to have the chicken but didn't feel like eating it.

    Tuesday - I'm eating that damn chicken come hell or high water with a side salad.

    Wednesday - I have some lean ground beef and am bored with burgers and tacos.  Any lighter fare suggestions?

    Thursday - I think chicken chopped up and sauteed, then tossed with olive oil and spices in some shape of pasta, possibly rigatoni.

    Friday - Probably a frozen pizza as I will need my kitchen to prep stuff for my sister's baby shower the next day.

    Saturday - I have said baby shower so probably something light since I'll be having a heavy lunch.

    If I had lean ground beef, I would probably do meatballs - not "lighter" fare, but I just throw in some egg, breadcrumbs, and chopped garlic, roll them up and cook them right in the sauce.  I'll just use some decent jarred stuff and large cans of tomato sauce.  Add some whole wheat pasta or rolls, lowfat cheese and it's not super terrible :-)

    You could also make lasagna with WW lasagna noodles, lowfat ricotta and lowfat mozz.

  • I've cooked 1 meal in last month besides Christmas Eve dinner.  Last week I baked salmon and asparagus on the alder wood baking board/pan thingy that my SIL sent me from Seattle.  The thing takes forever to pre-heat, but it smells so amazing and imparts a mild smoky flavor to whatever you bake on it.  I also roasted some yams with salt/pepper, brown sugar and teeny bit of chipotle powder.  They were delish.

    Last night I made a big salad and had a roll on the side.

    Tonight we will eat dinner out for my bday - something Italian.

    Weds - mustard/maple pork tenderloin...probably with more roasted yams even though DH prefers sweet tater fries instead.

    Thurs is girls' night, so pizza and other junk.

    Monday - sweet potato fries and chicken fingers 
    Tues - I'm having leftover Indian; DH is fending for himself b/c I have a photography class 
    Wed - pierogies and salad
    Thurs - chicken & zucchini thai curry
    Fri - probably takeout  

    DS is SUPER picky lately so we've been making him separate meals (I know, I know, I'm not supposed to be a short-order cook but I am one!).

  • Also, I have to say my newest obsession are green monster smoothies.  I absolutely hate with a passion green vegetables.  I wish the opposite were true but alas, I just don't have a taste for them.  So I've started drinking a green monster smoothie every morning.  It contains:

    1 cup spinach
    1 cup water
    1 whole banana
    1/2 cup strawberries (approximately)
    1/2 cup raspberries (approximately)

    They are so yummy and I'm amazed that you can't even taste the spinach!

    I swear!  You can quote me on it.  My hatred of greens is so ridiculous.  The hubs dehydrated some kale not that long ago.  I thought ok, it'll be like veggie chips, right?  WRONG.  I was gagging because of the taste.  He laughed hysterically at me when I called him to tell him of my adventures because he knew I'd hate it but wanted to see my reaction.

    I know I already posted about this on your FB, but I freaking love these things too!  I love that there are so many variations - you can pretty much add anything and it tastes good.

    I add:  handful of spinach, half of a very ripe banana, a couple spoonfuls of creamy PB, a teaspoon of ground flax seed, some skim milk and greek yogurt to get the consistency I want.  It tastes like a PB shake.  Sometimes I even add a half scoop of vanilla protein powder.

    That's basically Emma's diet, just add in bananas and applesauce.  If it's beige, she loves it.  I have no idea how to get her to eat more things.  I make her something separate almost every night, although that's at least partially because half the things we eat she can't.  

    I have decided she gets one thing though, if she won't eat it, that's it.  I made her a grilled cheese last night since we were having BLTs and she doesn't have enough teeth for that.  She wouldn't even try it although she normally loves it.  So she had applesauce and milk for dinner and went to bed.

    It's so tough!  Oliver was a good eater (broccoli almost everyday!) until a couple months ago. Our fail-proof meal is whole wheat pasta with pesto sauce...I usually make a batch at the beginning of the week and he has it everyday for lunch. I always make him a fruit salad, too, for daycare but he never eats it. I'm hoping one day he'll decide to eat it!

    I do smoothies in the morning and you cannot taste the spinach at all. I do peaches and pineapple frozen with regular banana.

    Ooh, I'm going to look for these, thanks for posting!  He also loves applesauce and bananas.  I have gotten him to eat the veggie purees in the pouches and he likes baked sweet potato fries.  He used to tear up green veggie purees but refuses to eat them whole.  It's so frustrating.  He has also been taking chicken nuggets and fish sticks.  Not exactly what I want him eating but whenever he tries ANYTHING new I'm excited.

  • I'm late to the game, but finally did a "real" grocery trip now that we're somewhat settled in the new house.

    Sunday: Mac & cheese and side salads

    Monday: Linguini with shrimp and broccoli in garlic sauce

    Tuesday: Out

    Wednesday: Chicken stroganoff

    Thursday: Taco bake

    Friday: Pizza?
