We're going away this weekend with SIL, her BF, and two of their friends. We are staying in a condo so we wanted to bring breakfasts and lunches with us from home, and then go out for dinners. I have my breakfast under control, but I'm looking for ideas for lunch. SIL is making soup and grilled cheese on her day. I was contemplating just buying assorted lunch meats for sandwiches, but SIL is a vegetarian. Any thoughts? Looking for something I can prep ahead of time because we will be in and out, skiing and such. Thanks!

Alex is a vegetarian and loves vegetarian soy "lunch meat." Some vegetarians are picky and won't eat "fake" meat, but it's worth checking out. Also, yummy salads with chicken for the non-vegs and avocado or beans for the vegetarian.

Veggie burgers or patties that can be easily microwaved or just a whole assortment of veggies for a yummy veggie sandwich.
Maybe a pasta thing that you can make ahead of time and heat up?
Bean/Cheese burritos
Mini pizzas with different toppings (Digiorno has little mini pizza dough all ready to go. Just get some sauce, already shredded cheese, maybe some mushrooms and spinach or other veggies (all pre-packaged and ready to go), if you want meat, you can throw a bag of pepperoni or diced ham or something... so everyone can make their own pizza... throw it in the oven for a few minutes to heat up... Yummy
PS If you're skiing, I would suggest something hot/warm... just a thought
