DH's great uncle is turning 100 years old in April and we are going out to Salt Lake City for the party. We are planning to go for the whole week (the party is on Wed Apr 4) to visit Las Vegas/ Bryce / Zion before and skiing afterwards, then flying out on a red eye on Sat. night. We live outside of Boston.
Itinerary 1: Fly round trip through Las Vegas (leaves a day later than we wanted)
Total Cost = ~$950 for flights, baggage fees, car rental
Itinerary 2: Fly round trip through Salt Lake City
Total Cost = ~$980 for flights, baggage fees, car rental
Itinerary 3: Fly into Las Vegas and out of Salt Lake City
Total Cost = ~$1350 for flights, baggage fees, car rental
Ideally we had hoped to fly open jaw (i.e. #3) but I can't justify spending almost $400. However it's also annoying that we're going to have to back track and waste vacation time driving between LAS and SLC (a ~7 hour drive).
The item that makes # 3 so much more expensive is the one way car rental. I used the published rental rates, so I could try priceline to see if we could get the one way rental from Las Vegas to SLC down to the same price as a R/T rental.
We're also 10 weeks out from the trip right now, so it's also possible that if I wait the airfare might drop (I do have a price alert setup to notify me of changes).
Any thoughts or ideas to find the perfect itinerary? Thanks!

Personally, I would do #2. When doing multicity trips, but flying in/out of only one city, I prefer to fly out of the last city of the trip. At the beginning of the trip, I usually don't mind the extra bit of travel b/c you're excited and gun-ho about vacation, but at the end of the trip, knowing that I have to leave, I just want to get home asap.
How long are the drives in between though? You'd have to consider how much is it worth it to pay extra for multicity flights vs spending time driving
