    Ok, here you go!

    Sausage & Spinach Stuffed Shells 

    32 large pasta shells
    1 lb bulk pork sausage , cooked and drained
    10 ounces chopped frozen spinach , thawed and drained
    4 eggs , beaten
    2 cups ricotta cheese
    2 cups shredded mozzarella cheese
    2 cups shredded cheddar cheese (I never use - just use more mozz)
    3 cups spaghetti sauce (I use alfredo. It's ah-maze-ing)

    Directions:
    - Cook pasta shells according to package directions.
    - Drain and rinse with cold water and drain again.
    - Combine remaining ingredients, except spaghetti sauce, in a large bowl and mix well.
    - Fill each pasta shell with 3 tablespoons of filling.
    - Place in a baking dish and top with spaghetti sauce.
    - Bake at 350 degrees until heated through, about 30 minutes.

    To freeze:
    - Freeze before baking.
    - You may freeze individually wrapped shells without sauce, or freeze sauce-topped shells in baking dish. (I freeze without sauce, in an 8x8 glad reusable freezer dish. Pull the shells out, cover with sauce and cook for about 45 mins. So, so good!)

    Broccoli, Chicken, Cheese & Rice (this is NOT high class. But it's yummy!) 

    4 teaspoons butter
    1 cup chopped fresh mushrooms (I omit, we don't like them)
    1/2 cup chopped onion (I use onion powder, I don't like cooked onions)
    1 lb boneless skinless chicken breast (cut into small pieces)
    2 garlic cloves , minced
    1 (10 1/2 ounce) can cream of chicken soup
    1 cup diced Velveeta cheese
    2 cups cooked instant rice
    1 (10 ounce) box frozen broccoli , cut, thawed, drained
    1/2 cup sour cream
    1/4 teaspoon ground black pepper
    vegetable oil cooking spray
    2 cups shredded cheese (your preference)

    Directions:
    - Melt butter over high heat, add chopped mushrooms.
    - Cook and stir for about 2 minutes.
    - Add onion and chicken pieces.
    - Reduce heat to medium high and cook until chicken is just cooked through.
    - Stir in garlic and cook for about a minute longer.
    - Add undiluted chicken soup and velveeta cheese, stir until cheese is melted.
    - Remove from heat and add cooked rice, thawed broccoli, sour cream, and pepper.
    - Spoon mixture together and spoon into casserole dish sprayed with cooking oil.
    - Spread shredded cheese over top and bake for 20 minutes at 350 degrees.

    NOTE: Instant rice makes this a quick and easy recipe.

    - Instant rice can be made in the microwave in about 4 minutes while the chicken is cooking. 
    - If you prefer other rice then make it ahead of time.

    * I freeze in 8x8 gladware freeze dishes, and sprinkle cheese on just before baking. From frozen, I'd bake for 30 mins or so and check it.

    Honey Garlic "Dump" Chicken

    1/4 cup butter , Melted
    1/8 cup soy sauce
    1/2 cup honey
    1 T minced garlic (I never measure, just throw some in :))
    1 1/2 lbs chicken pieces (breasts, thighs, or wings)

    Directions:
    - For immediate cooking: Pre-heat oven to 350?F Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

    - For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
    - To thaw and cook: Take the bag out of the freezer the night before, make sure the bag is sealed completely.

    - For the oven: Preheat the oven to 350?F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

    - For the crockpot: cook on low for 6-8 hours or on high for 4-6 or until done.

    - On the grill: cook over medium heat until juices run clear. Be sure to watch carefullly or these will burn! 

     

    Blackberry "Dump" Chicken
    3/4 cup ketchup
    3/4 cup blackberry jam (other jams work too, but I really like the blackberry)
    1/8 cup white vinegar
    1 teaspoon Worcestershire sauce
    2 teaspoons chili powder
    1/8 teaspoon salt
    1 1/2 lbs chicken pieces or 1 1/2 lbs chicken breasts

    Directions:
    - For immediate cooking: Preheat oven to 350?.
    - Place all ingredients into a prepared baking dish, turn chicken to coat. Bake until chicken juices run clear - about 45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts.

    - For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
    - To cook from the freezer: Thaw in the refrigerator.
    - Preheat the oven to 350?.
    - Empty the contents of the bag into a large baking dish and bake until the juices run clear *See above cooking times.
     
    Sweet & Tangy Steak Marinade

    1/3 cup reduced sodium soy sauce
    1/3 cup packed brown sugar
    1/4 cup sliced scallion , white and green parts
    1 tablespoon sesame oil
    1 tablespoon sesame seed
    2 teaspoons garlic , minced
    1 -1 1/2 teaspoon gingerroot , minced
    1/4 teaspoon chili pepper flakes (optional)
    2 lbs flank steaks (or any other steak - I use sirloin most of the time)
    Directions:
    - Mix together all ingredients except steak together in a bowl. Fold steak into thirds, placing outer edges towards the center. Place steak into a resealable freezer bag. Add marinade and squish around so that all of the steak surface is covered. Place into a second bag, seal and label.
    - Freeze steak for up to 2 month. To prepare, remove 2 days ahead and defrost in the fridge.
    - To prepare, pre-heat grill or broiler. Remove steak from bag and pour sauce into a small sauce pan. Bring sauce to a boil and simmer for 5 minutes.
    - Grill or broil steak for 5 minutes per side or until steak reaches 135 degrees. Remove steak from heat and allow to rest for 5 minutes before slicing.
    - To serve, thinly slice steak across the grain and spoon a bit of sauce on top.
    (if you are not preparing this as a make ahead meal, marinade meat for 2 to 4 hours before cooking.).
