Re: i want to make a trifle.

  • I make a lemon berry trifle for easter every year. I buy the organic whipping cream (the kind in the carton, not the spray stuff - it whips up pretty quick in the kitchen aid, just add vanilla extract and a dash of sugar). I layer the following:

    Mixed berries (whatever's available)

    Vanilla pudding

    Gluten free lemon yogurt cake

Lemon curd (I buy it at at Trader Joe's but it could be homemade)

Layer all of that to almost the top of the bowl, then spread whipped cream across the top, and garnish with berries and lemon slices.

I love trifle though! There are a ton of variations out there.

  • The thing about trifle is that it was invented to use up odds and ends of things, so you don't need a recipe really, just layers of some of the following types of components:

    • Cake item - this could be lady fingers, shortbread, poundcake or any kind of cake, brownies, etc. If you're ever making a sculpted cake for someone, use those leftover trimmings!
    • Jams, jellies, preserves, curds (lemon, lime, etc), custard, pudding, fruit or chocolate sauce (mmm...ganache)
    • Fruit or berries, mmm....if they're going soft, soak them in grand marnier or another liqueur!
    • Usually has whipped cream. Oh and IMHO, ALWAYS make your own, it's easy, fast, and tastes a MILLION times better and won't have all those preservatives, etc.
Those are just ideas of ingredients. You can mix in other things like chocolate chips, nuts, etc for crunch/interest or on top as a garnish. Personally, I think key is to make sure you have a higher percentage of liquidy things to soak in to the cake item.
