Just a heads up that black marshmallow fondant will take FOREVER to make as a true black. You need a lot of color to get it black. It's my biggest pet peeve and for that reason, I buy the Duff buttercream fondant in black. Makes my life so much easier and it stores nicely so you can use it in the future (if you bake a lot).
You can do the cutouts a day in advance for sure. I'd put them in a sealed container (and make sure you put down parchment or wax paper to make it easier to pick them up). If you are keeping the cake cold with the fondant base, they'll adhere to it when you pull it out of the fridge because of the temp change. If you're not keeping the cake cold, you can attach with a small amount of water or clear vanilla.
