Pasta Salad recipe?

I am hosting a baby shower for a friend on Saturday and I need to make a pasta salad.  Anybody have a good recipe that I can use? I would like to have something where I can put most of it together on Friday night, but maybe add some extra dressing to it on Saturday to freshen it up some.  Suggestions?

Re: Pasta Salad recipe?

  • lazy but yummy. Pasta, small cut up onion (light tasting one), cut up carrots, cherry tomatoes, cooked zucchini, olives, cucumber, celery, etc. Add a bottle of italian dressing and DONE. Could add cheese cubes if you want too. Don't forget the olives :) I usually use a pasta with crevices to hold more of the dressing
  • My recipe is kind of just a dump of ingredients, but it's good every time.

Boil a box of tri-rotini noodles, drain, and let them cool.  In the meantime, chop up half a red onion, one broccoli crown, some cauliflower, carrots, grape tomatoes, and a green pepper (Or whatever mix of veggies you like; I usually just use whatever I have).  Mix the veggies in with the pasta.  Make sure the pasta completely cool first though (run it under some cold water if you want).  Then, add in a cubed block of sharp cheddar cheese, a cubed ham steak, and some chopped pepperoni.  Mix it all together, and pour a bottle of Wishbone Zesty Italian (or whatever kind you prefer) over top.  The pasta tends to soak up the dressing, so I like to add a little more before serving.  It's soooo good!

  • I do pasta, small container of feta, halved cherry tomatoes, olives and maybe diced cucumbers with enough Italian dressing to make it moist and maybe some parmesan cheese.  Make ahead, chill and then add a little more dressing just before serving.

  • My two favorites are shrimp pasta salad (I'd chop and add the tomatoes the day off so they don't get mushy) and corn-fettuccine pasta salad, which is a knock-off of Souper Salad's version.  Both are fine in the fridge overnight.
