We have had 4 homecooked meals so far this week (unusual for us!) and was hoping to make it to tonight! On my schedule was chicken enchiladas, which I was going to prep last night, but I forgot/was too tired to defrost the chicken last night - so instead, I moved our crockpot chicken cacciatore for next week to tonight, which had a lot less prep involved. I sliced onion and mushrooms for it last night (5 mins) and then tossed frozen chicken, onions, mushroom, jarred sauce and some spices into the crock pot this morning!
That's the 3rd Italian this week, but oh well, I'll make it w/ rice so hopefully DH won't complain.
I'm just so psyched that I had a good back up that wasn't just "frozen pizza"

i had a doctor appointment and just did not feel like cooking. I'll be sure to make something tomorrow. I did make two new recipes this week which is a huge plus for me.

I'm having a day full of productivity-failure. It's the first day this week I didn't make it to the gym, I didn't clean or accomplish a single thing, and didn't cook dinner. In my defense, I've felt like poo all day long.
I never make a meal plan because I would change stuff around all the time anyway. I have to feel like eating what I am cooking that day and my cravings change daily
Sometimes I don't know what I am cooking until I start cooking. I defrost some meat in the mornings and I just have to cook something with whatever meat I took out.
If I forgot to take out meat I usually do something with chicken because you can slightly defrost it in the microwave in minutes and then cube them and fry them up to defrost and cook completely.
We plan on one night out a week but other than that I always cook. My favorite is to just go through the pantry and figure out a meal with whatever I have. My husband says I should cook on chopped some day.. lmao
Kudos to you all for sticking to a plan though, that must make grocery shopping easier. I just buy what I know I like to cook with.
Good for you!! I think I'm going to make it to 4 meals this week too and that is a win for me!! I should really keep a back up meal on hand all the time. Usually it's spaghetti with frozen meatballs, but like someone else said - better than take out!
Speaking of chicken in the crock pot, last weekend I threw a package of frozen chicken in there with some chicken broth and then shredded it and froze it for enchiladas this week. Omg I love shredded chicken but the prep time usually prevents me from making it. This worked out well so I'm tempted to do this again with a much larger quantity.

Good for you! We didn't exactly plan too well this week but we did manage to avoid extra trips to the grocery store and getting takeout, which is big for us.
One of these days I will have a perfect meal plan every week and follow it to the letter.
While I make a meal plan, I don't expect to follow it exactly. I mean I write down the list of what we are going to have, but don't necessarily assign it to a day. So if we get home early Monday, we may make Wednesday's dinner, etc.
My meal planning was only semi-successful, meaning that I didn't make everything on my list. I don't usually eat out, especially when it's just me and DD - it's too stressful for me. Also, I pretty much don't eat at places that have a drive-thru, so I don't worry about fast food too much. Rather, I just end up eating junk at home (chips& salsa and spoons of peanut butter
