We need more fish in our life.

Please give me some seafood dinner dishes. I've never made anything other than crab legs or fish sticks (lol) at home so nothing too crazy or complicated. Also, other than fish like catfish I've never tried any of it. I would like to try salmon, but don't know what to do with it to ensure I will like it right out of the gate. HELP!

  • This is a family recipe and it is so simple to make. I normally don't measure anything so these are approximate. :) 1 1/2 pds or more of littleneck or any small clams2 tbsp olive oil3 cloves garlic, sliced1/4 tsp crushed red pepper flakes2 tbsp chopped parsley1/2 tsp salt1 bottle clam juiceDIRECTIONS1In a large fry pan, cook garlic in oil until garlic is golden, not brown, for 2-3 minutes on low heat. Add red pepper flakes and salt.2Then steam clams in a separate large pot after cleaning with cool water and a brush. Add clam juice and parsley. Cover and steam until shells open, not any longer. If any shells do not open, throw them away. Then add to the garlic and pepper mix.3Cook linguine and drain, then add to the sauce and mix.
    I love cioppino. We have a family recipe but I can't share it online as I promised my great grandmother I wouldn't share it with anyone. BUT this one is pretty good.

  • Since you mentioned salmon -

    You can buy fresh or frozen. I like to buy one side of the entire fish.

    Lay it scales side down and rub with olive oil (or orange truffle oil).

    I squirt some fresh lemon juice and cracked pepper over it.

    Add lemon slices on top.

    Cover with some foil and then bake until done. The last 5 minutes or so, I take the foil off.

    That alone is delicious. I normally put that with some edemame and tortellinis. You can find the already shelled edemame at trader joes for pretty cheap and their frozen spinach tortellinis are yummy.

  • I make chili rubbed tilapia.  I mix a bowl of chili, cayenne pepper, garlic salt and onion salt in a bowl and then rub it on each side of the fish.  Fry them in a skillet on low heat because they'll burn/fall apart easily.

    Or just lemon pepper, either fresh lemon and cracked pepper or you can buy seasoning that is lemon pepper and just use that on each side. 

    Salmon I either a)marinade in a mix of soy sauce, garlic salt, onion salt and honey/agave nectar. I typically with then fry it and add it with stir fry veggies or quinoa. 

    Or

    I rub dijon mustard and honey on each side of the salmon and then wrap them in tinfoil bake it in the oven for about 20 minutes. 

     

    The biggest thing with fish is to make sure you cook it with butter or olive oil or something to keep it moist because it can dry out very easily.

I'd actually try it with plain Greek yogurt next time around...I think it would taste better than the mayo. 

    We also like rare-cooked tuna steaks, just marinate in terriyake and ginger for a while, cook each side for a few minutes in a skillet.

  • We love fish tacos.  I use talapia.  It is a white, flaky fish that is easy to use and cook.  I season it with salt, pepper and a little creole seasoning.  Heat your pan with a little drizzle of olive oil or canola oil.  Cook it in the pan until it's cooked through.  I like the edges to be a little crispy. 

    Take a bag of precut cole slaw and add a couple table spoons of either a cole slaw dressing or I like poppyseed dressing.  I take a tortilla and add the fish, cole slaw, avacado and some salsa.  Wrap it up and chow down.  They are so yummy. 

    Our local fish market and one of our grocery stores sells bourbon marinated salmon.  I like to take that and throw it on the grill.  When it is almost done, I take 2 tbl spoons of honey and half a can of crushed pineapple.  Mix it and spoon over the salmon while it's still on the grill.  I would punch some one in the mouth for the last piece.  I usually serve it with grilled asparagus and a salad.

    Oh I forgot about beer battered fish tacos! 

     

    3 tablespoons all-purpose flour
    1/8 teaspoon ground cumin
    1/8 teaspoon salt
    1 tsp cayenne pepper
    1/3 cup beer ? I usually use a stout or a red, more flavor and better body
    8 ounces tilapia fillet, cut crosswise into 1-inch wide strips

    Stir all the dry ingredients together, add beer and mix well. Use a deep skillet, put some canola oil in it and let it get hot. Batter your pieces of fish and fry ?em up!
