Hey ladies! What's on the menu for this week? I'm shopping tonight and need some ideas. All I have got on the menu so far is the country casserole that Shar posted last week.

3/4 of those recipes are just some of my quick & easy meals because we don't have much in the way of groceries currently. I'm excited to test out my Friday recipe, though.

if you like salmon, make this! it was so easy and basically mess free because you bake the fish in parchment paper - which means so pots/pans/bowls to clean up after! all i used to prep the meal was 1 knife, 1 cutting board, a measuring cup and my garlic press!
My husband was thrilled to come home from a business trip to this salsa chicken in the crockpot. I chose to make this recipe for him because it had no dairy (sour cream, cream cheese etc) and it included beans and corn rather than taco seasoning (extra sodium). It was in the crockpot for a long time so the chicken ended up shredded, it was perfect to make tacos! I heated up some corn tortillas on the stove and he was the happiest guy around!

It was ridiculously easy and really delicious! I actually made it on the stove instead of the crockpot. I also used a lot less cream cheese to cut down on fat and it was still very creamy.
