Does anyone have a list of veggies that are ok to freeze? Also, is it ok to prep the veggies prior to freezing (like chopping and putting into baggies)? The only thing I know you can prep and freeze are onions and I only know this because they sell them in the store lol

I don't know about having a list - but I do know that its a good idea to blanch vegetables before freezing them - Here's a basic how-to blanch
Blanching preserves the color and the vitamins/minerals you get in fresh veggies. I've frozen the following with no problem:
1. Broccoli
2. Carrots
3. Corn
4. Spinach
5. Mushrooms

As soon as you said that I started thinking about sautee-ing peppers in the summer. Sigh. Now I can't wait, haha!

I agree. We have a farmer's market in the old Dr. Pepper bottling district downtown that's AWESOME. So cheap and soooo much fun. The local cooking school does demonstrations and tastings, there's always a band and everybody has samples.
Now I want stir frys! I love frying up some peppers for fajitas or putting them on rice with some awesome sauces. It's so expensive in winter though...especially for how many peppers we like to use!
I think my fave part of farmers markets is that they have organic dog treats that smell like they could be people treats (technically they said we could eat them because all of the ingredients are good for you). The peanut butter ones smell like nutter butters, the cheese ones smell like Goldfish, and the pumpkin ones smell like pumpkin pie. They're Buddy's fave. We spoil him with a different kind every time!
