Easy Crock Pot (and stove top) Sausage Ragu & Penne

I just reproduced the pasta dish I had at The Grove on Friday for lunch.  It was a penne pasta with a pork ragu and grape tomatoes.  Yummy!!

 1 pound mild ground (loose) Italian sausage

1 medium yellow onion, chopped

3 cloves garlic, minced

3 Tbsp dried basil (or 1/4 cup or so fresh, chopped)

2-3 Tbsp olive oil 

3 14.5 ounce cans diced tomatoes 

1/4-1/2 cup chicken broth

Penne pasta (about 6-8 servings) 

1 pint grape tomatoes

Crumbled goat cheese 

Salt and pepper to taste

I don't really measure things - I just eyeball, so amounts are approximate (except tomatoes (canned and grape) and onion).  Saut? onion and garlic in olive oil in a large sauce pan or Dutch oven.  Season with about 1 teaspoon of salt (or less if you don't like too much salt) and some fresh ground black pepper. Add  canned tomatoes and dried basil.  Bring to a boil, then lower to a simmer for about 10 minutes.  Meanwhile, brown the sausage.  Drain the sausage.  Put everything in the crock pot.  Add the chicken broth and give it all a good stir.  Cook on high for 5 hours.  When it is done, prepare the penne according to package directions.  Transfer crock pot contents to large skillet.  Throw in grape tomatoes and cook until skins start to split.  Stir in cooked pasta.  Serve topped with crumbled cheese.  Salt and pepper to taste.  (You can put shredded Parmesan on, too, or instead).  (You can also sprinkle crushed red pepper if you want some spice - DH did that - I don't really like it spicy).

You can also use fresh basil - leave it out unt you put the tomatoes in, then stir it in and cook until the tomatoes split.  I just didn't have fresh, so I used dried.

 Just thought I'd share.  Hope you like it.   I hope I didn't forget any steps!
